Ingredients

Vegetables

  • 4 medium zucchini
  • 4 garlic cloves, finely chopped
  • 1/4 cup chopped parsley

Seafood

  • 1.5 lb (approximately 30) raw shrimp, peeled and deveined

Liquids & Fats

  • 2 tbsp olive oil
  • 2 tbsp butter or ghee
  • 1 lemon (juice and zest)
  • 1/4 cup chicken broth

Spices & Seasonings

  • Pinch of red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Prepare zucchini noodles: Wash the zucchini and trim the ends. Use a spiralizer to create zucchini pasta (zoodles). Set aside.
  2. Cook shrimp: Heat olive oil in a large pan over medium-high heat. Arrange shrimp in a flat layer, seasoning with salt and pepper. Cook for one minute undisturbed to create a slight crisp on the bottom.
  3. Add garlic and finish shrimp: Add chopped garlic to the pan. Stir and cook shrimp for another 1-2 minutes until fully cooked. Remove shrimp with tongs or spoon and place on a plate.
  4. Make lemon garlic sauce: Add butter, lemon juice and zest, red pepper flakes, and chicken broth to the pan. Bring the mixture to a simmer and stir for 2-3 minutes.
  5. Combine pasta and shrimp: Stir parsley into the sauce, add zucchini noodles, and toss gently for 30 seconds to warm through. Return shrimp to the pan and stir for another minute. Serve immediately.

Notes

  • Use a spiralizer or vegetable peeler to create zucchini noodles for a low-carb alternative to pasta.
  • Don’t overcrowd the pan when cooking shrimp to ensure even cooking and crisping.
  • Adjust red pepper flakes according to your heat preference.
  • Serve immediately to keep zucchini noodles firm and prevent them from becoming soggy.
