This White Pizza with Spinach and Garlic is a flavorful, sauce-free pizza featuring a crispy Chebe bread crust topped with a blend of melted cheese, sautéed garlic spinach, and a hint of lemon. Perfectly balanced with a spicy kick from red pepper flakes and a golden crust, it's an easy and delicious dish to prepare in under 30 minutes.

Ingredients

For the Pizza

  • 1 pkg Chebe Bread Pizza Crust Mix
  • 2 Eggs
  • 2 tablespoons Olive Oil (plus more for brushing the crust)
  • ¼ cup Milk (or milk substitute)
  • 4 oz Pizza Cheese Blend
  • 2 cloves Garlic (finely chopped)
  • 1 Pinch Red Pepper Flakes (or to taste)
  • ¼ Lemon (wedge)
  • Sautéed Spinach (see below)

Sautéed Spinach

  • 1 tablespoon Olive Oil
  • 1 clove Garlic (minced)
  • 2.5 oz Fresh Baby Spinach (about 4 cups, lightly packed)
  • 1 pinch Red Pepper Flakes

Instructions

  1. Preheat Oven: Preheat your oven to 450°F and place a cast-iron pizza pan in the center to heat. If you don’t have a cast-iron pan, use any pizza pan without preheating it.
  2. Prepare Sautéed Spinach: Heat 1 tablespoon olive oil in a medium pan over medium-high heat. Add the minced garlic and stir until fragrant. Then add fresh spinach and a pinch of red pepper flakes. Sauté until the spinach is wilted but still vibrant green. Drain excess liquid using a colander.
  3. Make Pizza Dough: In a bowl, whisk together eggs, 2 tablespoons olive oil, and milk. Stir in the Chebe Bread Pizza Crust Mix until combined. The dough will be loose and crumbly.
  4. Knead Dough: Pour the dough onto a clean surface and knead with your hands until it forms a smooth ball.
  5. Roll Out Dough: Place the dough ball on parchment paper and roll it out to a 12-14 inch diameter. Use a fork to prick holes all over the surface to prevent bubbles. Brush with olive oil.
  6. Pre-bake Crust: Transfer the crust on parchment paper to the preheated pizza pan and bake for 7 minutes.
  7. Top the Pizza: Remove crust from oven and brush with more olive oil. Evenly spread the cheese blend, sautéed spinach, and finely chopped garlic over the crust.
  8. Bake Pizza: Return the pizza to the oven and bake for another 7 minutes until the cheese is melted and the crust is golden brown.
  9. Finish and Serve: Remove pizza from oven, sprinkle with red pepper flakes, and squeeze fresh lemon juice over the top. Slice and enjoy!

Notes

  • Using a cast-iron pizza pan helps achieve a crispy crust but any pizza pan will work.
  • You can substitute milk with a plant-based milk if you prefer a dairy-free option.
  • Adjust the amount of red pepper flakes to control the spiciness.
  • Drain the sautéed spinach well to avoid soggy pizza topping.
  • Crisping the crust with a pre-bake step ensures it doesn’t get soggy under the toppings.
