Fudgy, gooey white chocolate brownies made in one bowl with a rich and delicious flavor that improves after cooling. Perfect for white chocolate lovers, these brownies are topped with melted white and semi-sweet chocolate for an extra indulgent touch.

Ingredients

For the Brownies

  • 2/3 cup unsalted butter
  • 6 oz white chocolate (use baking white chocolate, not candy melts)
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 large eggs, room temperature
  • 1 1/4 cups all-purpose flour, spooned and leveled

For the Topping

  • 1/3 cup white chocolate chips
  • 1/3 cup semi-sweet chocolate chips (or dark chocolate chips)

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with aluminum foil and spray it with non-stick cooking spray. Set aside.
  2. Melt Butter and White Chocolate: In a medium microwave-safe bowl, melt the butter and white chocolate together in 20-second bursts, stirring between each burst, until fully melted. Let cool for 5 minutes.
  3. Mix Wet Ingredients: Whisk in the granulated sugar to the melted mixture, then add vanilla extract, eggs, and salt, whisking until combined and smooth.
  4. Fold in Flour: Gently fold the all-purpose flour into the wet mixture until just combined. Avoid overmixing to keep brownies fudgy.
  5. Bake the Brownies: Pour or spoon the batter into the prepared pan. Bake for 20-24 minutes, or until the top is set and sides start to pull away from the pan. A toothpick inserted in the center should come out with a few moist crumbs or clean.
  6. Cool Fully: Allow the brownies to cool completely in the pan on a wire rack. This helps them finish setting and improves flavor.
  7. Remove and Cut: Use the edges of the aluminum foil to lift the brownies out of the pan. Carefully peel back the foil, then cut into 9 or 12 squares depending on preferred size.
  8. Melt Toppings: In a small bowl, melt the white chocolate chips in the microwave in 20-second bursts, stirring between each until smooth. Drizzle over each brownie square.
  9. Drizzle Dark Chocolate: Repeat the melting process with semi-sweet chocolate chips and drizzle over the squares for a decorative and flavorful finish.

Notes

  • Store brownies in an airtight container in the refrigerator for 4-5 days to maintain freshness.
  • Use baking white chocolate for best texture and melting properties; candy melts do not produce the same results.
  • Allowing brownies to cool fully before adding chocolate drizzle improves flavor and texture.
