Ingredients

Main Ingredients

  • 1 pound ground beef (80-90% lean)
  • 1 cup chopped yellow onion
  • 1 packet chili seasoning mix
  • ½ cup beef broth or water
  • 1 can kidney beans, drained
  • ½ bag Fritos corn chips
  • 3 cups shredded cheese (Mexican blend or cheddar)

Optional Toppings

  • Shredded lettuce
  • Jalapeños, sliced
  • Chopped tomatoes
  • Sour cream
  • Green onions, chopped
  • Cilantro, chopped
  • Guacamole

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Cook beef and onions: In a large skillet over medium heat, brown the ground beef with the chopped yellow onion until the beef is fully cooked and the onions are soft. Drain any excess fat if needed.
  3. Add seasoning and mix: Turn off the heat, then stir in the chili seasoning mix, beef broth or water, drained kidney beans, and 1 cup of shredded cheese into the beef mixture until well combined.
  4. Assemble casserole: Spread the beef mixture evenly into a 9x9 or 9x11 inch casserole dish. Sprinkle the Fritos corn chips evenly over the top, then add the remaining 2 cups of shredded cheese on top of the chips.
  5. Bake: Place the casserole in the preheated oven and bake for 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden.
  6. Add toppings and serve: Remove the casserole from the oven and add your favorite toppings such as shredded lettuce, chopped tomatoes, jalapeños, sour cream, green onions, cilantro, or guacamole before serving.

Notes

  • Nutrition information does not include optional toppings.
  • For a spicier casserole, add extra jalapeños or use spicy chili seasoning.
  • Ground turkey or plant-based meat can be substituted for ground beef for a lighter or vegetarian option.
  • Use a 9x9 or 9x11 inch casserole dish for best layering and baking results.
