This Viral Chocolate Banana Bark is a simple, no-bake frozen treat that combines creamy peanut butter, ripe bananas, and rich dark chocolate. Perfect for a healthy dessert or snack, this recipe is easy to prepare and requires freezing to set the bark into delightful, bite-sized pieces with optional flaky sea salt for a perfect sweet and salty flavor balance.

Ingredients

Banana Base

  • 2 medium semi-ripe bananas

Peanut Butter Layer

  • 1/2 cup + 2 tablespoons drippy, creamy peanut butter

Chocolate Topping

  • 1.5 cups dark chocolate chips
  • 1 teaspoon coconut oil (optional)
  • Flaky sea salt (optional)

Instructions

  1. Prepare Baking Sheet: Line a medium-sized baking sheet with parchment paper to prevent sticking and facilitate easy removal of the bark after freezing.
  2. Slice Bananas: Peel and slice the bananas into approximately 1/3-inch thick slices, cutting on a slight angle for better arrangement. Ensure slices are uniformly sized for even freezing and texture.
  3. Arrange Bananas: Place banana slices closely together in a rectangular shape on the parchment-lined baking sheet so they hold together well once frozen.
  4. Spread Peanut Butter: Use a rubber spatula to evenly cover the banana slices with creamy peanut butter. If the peanut butter is too thick to spread easily, warm it in the microwave for 10-15 seconds to soften. Then place the baking sheet in the freezer for 20 minutes to set the peanut butter layer.
  5. Melt Chocolate: In a microwave-safe dish, heat the dark chocolate chips (and optional coconut oil) in 30-second intervals, stirring between each, until mostly melted and smooth. Be careful to avoid burning.
  6. Apply Chocolate Layer: Remove the banana and peanut butter bark from the freezer. Pour and spread the melted chocolate over the surface in an even layer. Optionally, sprinkle flaky sea salt or other desired toppings for added flavor.
  7. Freeze to Set: Return the bark to the freezer for at least 90 minutes to 2 hours until fully hardened.
  8. Serve: Once set, take the bark out of the freezer, flip it over, peel away the parchment paper, and break the bark into large pieces. Enjoy immediately or store frozen.

Notes

  • Use semi-ripe bananas for the best balance of sweetness and firmness.
  • If peanut butter is too thick for spreading, warming it slightly helps create a smooth layer.
  • Adding coconut oil to chocolate helps improve texture and sheen but is optional.
  • Flaky sea salt enhances the sweet and salty flavor contrast but can be omitted if preferred.
  • Store leftover bark in the freezer to maintain firmness and freshness.
