These Viral Chickpea Truffles are a simple, delicious, and healthy treat made with just three main ingredients: chickpeas, nut butter, and vegan dark chocolate. Coated in melted chocolate and optional toppings, they are perfect for a guilt-free dessert or snack that’s vegan, gluten-free, and easy to prepare.

Ingredients

Main Ingredients

  • 1 13.5 oz can of chickpeas (drained and rinsed)
  • 1/2 cup nut or seed butter (almond or cashew butter recommended)
  • 1 cup vegan dark chocolate chips (melted)

For Coating

  • 1 cup vegan dark chocolate chips (melted)
  • 1 tbsp coconut oil

Optional Toppings

  • Cacao nibs
  • Goji berries
  • Sprinkles
  • Shredded coconut
  • Nuts or seeds
  • Freeze dried fruits

Instructions

  1. Prepare the chickpeas: Drain and rinse one can of chickpeas thoroughly to remove any excess liquid and salt.
  2. Melt the chocolate: Melt 1 cup of vegan dark chocolate chips either in the microwave in short bursts, stirring frequently, or on the stovetop using a double boiler for smooth melting.
  3. Blend ingredients: Add the drained chickpeas, 1/2 cup nut butter, and the melted chocolate chips to a food processor or blender. Blend for 45-60 seconds until the mixture is smooth and well combined.
  4. Scoop the mixture: Using a cookie scoop, form balls from the mixture and place them on a parchment-lined baking sheet. Freeze for 15-20 minutes to allow the balls to harden slightly.
  5. Shape the truffles: Remove the partially frozen balls from the freezer and roll them between your hands to create smooth, round truffles. Return them to the freezer for an additional 10 minutes to firm up.
  6. Melt coating chocolate: While the truffles firm up, melt an additional 1 cup of vegan dark chocolate chips with 1 tablespoon of coconut oil until smooth and shiny.
  7. Coat the truffles: Remove the truffles from the freezer and dip each one into the melted chocolate coating, ensuring they are well covered.
  8. Add toppings: If desired, sprinkle your choice of toppings such as cacao nibs, goji berries, shredded coconut, or nuts/seeds on the truffles before the coating sets.
  9. Freeze to set: Place the coated truffles back onto the parchment-lined baking sheet and freeze until the chocolate hardens completely, about 10-15 minutes.
  10. Store and enjoy: Remove from the freezer and store the truffles in the fridge for 7-10 days or in the freezer for 30-60 days. Enjoy as a healthy, vegan dessert or snack!
