These Veggie Pinwheels are colorful, creamy, and packed with fresh vegetables, making them a perfect appetizer or party snack. Soft tortillas filled with a ranch-seasoned cream cheese mixture are layered with shredded cheddar and crisp chopped veggies, then rolled up and chilled for a refreshing and easy-to-serve treat.

Ingredients

Vegetables

  • 1 cup chopped carrots
  • 1 cup chopped bell peppers
  • 1 cup chopped broccoli
  • 3 green onions, sliced thin

Cheese Mixture

  • 12 ounces cream cheese, softened
  • 1 packet ranch seasoning
  • 1 cup shredded cheddar cheese

Base

  • 3 large burrito-size flour tortillas

Instructions

  1. Prepare Cream Cheese Mixture: In a mixing bowl, combine the softened cream cheese with the packet of ranch seasoning until well blended and smooth.
  2. Incorporate Cheese: Add in the shredded cheddar cheese to the cream cheese mixture and stir until evenly mixed.
  3. Lay Out Tortillas: Spread out the three large flour tortillas flat on a clean surface.
  4. Spread Mixture: Evenly divide the cream cheese mixture among the three tortillas and spread into an even layer over each one.
  5. Add Vegetables: Sprinkle each tortilla with one-third of the chopped broccoli, carrots, bell peppers, and sliced green onions, distributing the vegetables evenly.
  6. Roll Up Tortillas: Starting from one edge, tightly roll up each tortilla into a pinwheel shape. Wrap each rolled tortilla tightly in plastic wrap.
  7. Chill: Place the wrapped pinwheels in the refrigerator and chill for at least one hour to firm up and allow flavors to meld.
  8. Slice: Remove the plastic wrap and use a serrated knife to slice each roll into 1-inch thick pinwheel pieces.
  9. Serve: Arrange the pinwheels on a serving platter and serve chilled for a fresh, crunchy snack.

Notes

  • Use a serrated knife for clean cuts without squishing the pinwheels.
  • You can substitute ranch seasoning with Italian seasoning for a different flavor twist.
  • These pinwheels are best served within 24 hours of preparation.
  • Feel free to add other vegetables like cucumbers or spinach for extra variety.
  • For a gluten-free option, substitute the flour tortillas with gluten-free tortillas.
