Delicious and fluffy vegan sweet potato pancakes made with gluten-free oat flour, perfect for a nutritious breakfast or brunch. These pancakes are naturally sweetened with maple syrup and have the creamy texture of mashed sweet potatoes, offering a wholesome gluten-free and vegan option.

Ingredients

Dry Ingredients

  • 2 cups gluten-free oat flour
  • 2 tsp baking powder

Wet Ingredients

  • 1 cup mashed sweet potato
  • 1.5 cups plant milk (such as almond, soy, or oat milk)
  • 3 tbsp maple syrup (plus more for serving)

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the gluten-free oat flour and baking powder until evenly combined.
  2. Add Wet Ingredients: Add the mashed sweet potato, plant milk, and 3 tablespoons of maple syrup to the dry mixture. Whisk thoroughly until the batter is smooth and well-combined.
  3. Cook the Pancakes: Heat a non-stick frying pan over medium heat. Pour about 2-3 tablespoons of batter onto the pan for each pancake. Cook for 2-3 minutes or until the edges start to brown and bubbles form on the surface.
  4. Flip and Finish Cooking: Flip the pancakes carefully and cook for an additional 30 seconds to 1 minute on the other side until golden brown and cooked through.
  5. Serve: Remove from the pan and serve immediately, drizzled with extra maple syrup and your choice of toppings such as fresh fruits, nuts, or vegan butter.

Notes

  • Use gluten-free oat flour to keep this recipe gluten-free and safe for those with gluten sensitivities.
  • You can substitute mashed sweet potato with pumpkin or butternut squash for a variation in flavor.
  • If the batter is too thick, add a little more plant milk to achieve desired consistency.
  • Ensure the pan is properly heated before adding batter for even cooking and browning.
  • Store leftover pancakes in the fridge and reheat in a toaster or skillet for best texture.
