Ingredients

Sushi Rice

  • 2 cups (500ml) sushi rice
  • 2 cups (500ml) water
  • 1 tbsp rice wine vinegar
  • 1/2 tbsp sugar
  • 1/4 tbsp flaky salt

Marinated Tofu and Radish

  • 280g tofu, thinly sliced into strips
  • 10 radishes, chopped into small pieces
  • 3 tbsp light soy sauce
  • 1 tbsp rice wine vinegar
  • 2 garlic cloves, minced
  • 1 tsp sugar
  • 2 nori sheets, roughly broken apart

Toppings and Garnishes

  • 1 avocado, sliced into cubes
  • 1/2 cucumber, thinly sliced
  • 1 tbsp furikake seasoning
  • 2 tbsp sriracha
  • 2 tbsp vegan mayonnaise
  • 2 spring onions, finely chopped
  • 1 carrot, julienned
  • 8 nori sheets, for serving

Instructions

  1. Cook the Sushi Rice: Rinse the sushi rice in a saucepan under cold water until the water runs clear. Drain and add the rice back to the saucepan with 2 cups of water. Bring to a gentle boil over medium heat, then cover with a lid and reduce the heat to low. Cook for 10 minutes without lifting the lid. Turn off the heat and let it sit covered while you prepare other ingredients.
  2. Prepare the Tofu and Radish Marinade: Slice tofu into thin strips and chop the radishes into small pieces. In a bowl, combine tofu, radishes, broken nori sheets, light soy sauce, rice wine vinegar, minced garlic, and sugar. Mix well to coat evenly and set aside to marinate, allowing flavors to meld.
  3. Season the Rice: In a small bowl, mix together 1 tablespoon of rice wine vinegar, 1/2 tablespoon sugar, and 1/4 tablespoon flaky salt. Pour this seasoning mixture over the cooked sushi rice and gently fold it in to evenly coat. Adjust seasoning to taste if needed.
  4. Preheat the Oven: Set your oven to 200°C (390°F) conventional or 180°C (360°F) fan-forced to prepare for baking.
  5. Assemble the Bake: Spread the seasoned sushi rice evenly in the bottom of a baking dish. Layer the marinated tofu and radishes over the rice, followed by julienned carrot and finely chopped spring onions.
  6. Bake: Place the assembled dish in the preheated oven and bake for 20 minutes until the top is golden and the layers are hot and melded.
  7. Add Toppings: Remove the dish from the oven and add fresh toppings including cubed avocado, thinly sliced cucumber, a sprinkle of furikake seasoning, dollops of sriracha, and vegan mayonnaise.
  8. Serve: Serve the sushi bake warm along with the nori sheets to use as edible utensils for scooping bites and enjoying all the combined flavors.

Notes

  • Allow the tofu and radish to marinate longer for a deeper flavor.
  • Use a non-stick or glass baking dish for even heating and easy cleanup.
  • Adjust sriracha and vegan mayo quantities based on your preferred spice and creaminess levels.
  • Furikake seasoning can be omitted or substituted with toasted sesame seeds if unavailable.
  • Leftovers can be refrigerated for up to 2 days and reheated gently in the oven.
