Ingredients

Roasted Vegetables

  • 2 lbs cherry tomatoes
  • 1 red onion, roughly chopped
  • 1 head garlic
  • Olive oil (for roasting, amount as needed)
  • 1 tsp salt and pepper (to taste)

Soup Base

  • ¼ cup nutritional yeast
  • ½ cup coconut milk
  • 375 grams soft or silken tofu (1 block)
  • 1 handful fresh basil

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) to prepare for roasting the vegetables.
  2. Roast Vegetables: On a parchment-lined baking sheet, arrange cherry tomatoes, roughly chopped red onion, and whole garlic head. Drizzle with olive oil and season with salt and pepper. Roast for 35 minutes or until the tomatoes have burst and vegetables are soft.
  3. Prepare for Blending: Once the vegetables are cool enough to handle, remove the skin from the roasted garlic cloves and discard the skins. Transfer the roasted cherry tomatoes, onion, and peeled garlic into a high-speed blender.
  4. Add Ingredients: Into the blender, add the nutritional yeast, coconut milk, silken tofu, and fresh basil leaves.
  5. Blend until Smooth: Puree all the ingredients together until the mixture reaches a completely smooth and creamy consistency.
  6. Season and Serve: Taste the soup and adjust seasoning with additional salt and pepper if needed. Serve warm and enjoy this nutritious vegan high-protein soup.

Notes

  • Using silken tofu adds protein and creaminess without altering the taste.
  • Be careful when blending hot ingredients to avoid splattering—blend in batches if necessary and vent the blender lid slightly.
  • Fresh basil can be substituted with dried basil but use about 1 tablespoon dried.
  • The soup can be served hot or chilled as a refreshing option.
  • For a thicker soup, reduce the coconut milk slightly or add less during blending.
