This Vegan Garlic Pull Apart Bread is a deliciously soft and flavorful loaf infused with a garlic butter filling. Perfect for sharing, this bread is easy to make with a yeast dough enhanced by Italian seasoning and garlic powder, then baked until golden brown with a crispy crust and a tender, pull-apart interior. It's an ideal vegan twist on classic garlic bread, great as a side or snack.

Ingredients

Dough Ingredients

  • 3/4 cup warmed water
  • 2 1/4 teaspoons active dried yeast
  • 1/4 cup melted unsalted vegan butter
  • 2 1/2 cups all-purpose flour (plus up to 2 tablespoons if needed)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon garlic powder

Garlic Butter Filling

  • 6 tablespoons salted vegan butter, room temperature and softened
  • 6 cloves garlic, finely minced
  • 1/4 teaspoon chili flakes (optional)
  • 1/4 teaspoon salt (optional, if using unsalted butter)

Topping

  • Melted vegan butter (to brush on bread before baking)
  • Flaky sea salt (optional, for sprinkling on baked bread)

Instructions

  1. Activate the yeast: Add the lukewarm water and active dried yeast to a mixing bowl. Let it sit for 5-10 minutes until it becomes foamy and activated, indicating the yeast is alive.
  2. Mix dough ingredients: Stir in the melted unsalted vegan butter to the yeast mixture. Then add flour, Italian seasoning, garlic powder, and salt. Mix until a thick, shaggy dough forms.
  3. Knead the dough: Using a stand mixer with a bread hook, knead for 5-7 minutes until elastic and no longer sticking to the sides. If kneading by hand, turn dough onto a floured surface and knead 8-10 minutes until smooth, tacky, and stretchable without tearing.
  4. First rise: Shape the dough into a round ball and place it in a well-oiled bowl. Cover with plastic wrap or a towel and let it rise in a warm place for about 1 hour, until doubled in size.
  5. Prepare garlic butter filling: While dough rises, finely mince garlic. In a bowl, mash together the softened salted vegan butter, minced garlic, chili flakes, and optional salt if using unsalted butter, until smooth and combined.
  6. Shape the bread: Line or grease a loaf pan and set aside. Punch down the risen dough to release air and transfer it to a floured surface. Divide the dough into 10-12 equal pieces and roll each into a ball.
  7. Flatten dough pieces: Using hands or a rolling pin, flatten each ball into a circular disc. They don't need to be perfectly round.
  8. Fill and assemble: Spread about 2 teaspoons of the garlic butter filling on each disc. Fold each disc in half and arrange them in the loaf pan with the round side facing up, stacking them closely together.
  9. Second rise: Cover the pan with a towel and let the dough rise again for 30 minutes until puffy.
  10. Preheat and prep for baking: Preheat the oven to 350°F (175°C). Brush the top of the assembled bread with melted vegan butter to encourage browning during baking.
  11. Bake: Bake the bread for 40-50 minutes until the top is golden brown and the bread is cooked through.
  12. Cool and serve: Remove the bread from the oven and let it cool in the pan for 5-10 minutes. Then transfer to a wire rack. Optionally sprinkle flaky sea salt on top, pull apart the pieces, and enjoy warm.

Notes

  • Use warm water (not hot) to activate yeast for best results.
  • If dough is too sticky, add flour gradually up to 2 tablespoons until manageable.
  • Adjust chili flakes according to your preferred spice level or omit for no heat.
  • Softened butter is easier to mash with garlic for a smooth filling.
  • For best texture, allow dough to fully rise during both rising steps.
  • Use parchment paper in the loaf pan for easy removal and less cleaning.
  • Store leftovers tightly wrapped at room temperature for 2 days, or freeze for longer storage.
