Ingredients

Soup Ingredients

  • 1 Tbsp olive oil, plus more for drizzling
  • 3 large garlic cloves, minced or pressed
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • ¼ tsp chili flakes
  • 2 cans (15 oz each) chickpeas
  • 1 large potato (6 oz / 180 grams), diced
  • 2 cups (480 ml) low-sodium vegetable broth
  • Salt & black pepper, to taste

Instructions

  1. Puree Chickpeas: Pour one can of chickpeas with its liquid into a blender and purée until smooth, setting it aside for later use.
  2. Sauté Garlic: Heat olive oil in a pot over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Combine Ingredients: Add the puréed chickpeas, the second can of drained chickpeas, diced potato, paprika, dried rosemary, dried thyme, chili flakes, and freshly cracked black pepper to the pot. Stir well to combine.
  4. Add Broth and Cook: Pour in the low-sodium vegetable broth and stir again. Cover the pot with a lid, increase heat to medium-high, and bring the soup to a boil. Then reduce heat to medium-low and simmer for 25 minutes, stirring occasionally until the potato is tender and flavors meld.
  5. Season and Serve: Taste the soup and adjust seasoning as needed, adding about ¼ tsp salt or to preference. Serve hot, drizzled with olive oil and freshly ground pepper. Enjoy with crusty bread for dipping.

Notes

  • You can substitute dried herbs with fresh ones if available, but reduce quantities as fresh herbs are more potent.
  • For a spicier soup, increase chili flakes or add a dash of cayenne pepper.
  • This soup stores well in the fridge for up to 3 days and freezes beautifully for up to 2 months.
  • To make the soup thicker, simply blend more chickpeas or reduce the amount of broth.
  • Ensure not to overcook the garlic during sautéing to avoid bitterness.
