A delicious and easy vegan chickpea salad sandwich that mimics the taste and texture of traditional tuna salad sandwiches, perfect for a quick, nutritious, and plant-based lunch option.

Ingredients

Chickpea Salad

  • 1 15.5 oz can chickpeas, drained and rinsed
  • 1/3 cup vegan mayo (use soy-free if needed)
  • 1/4 cup celery, chopped
  • 1/3 cup dill pickles, chopped
  • 1 tbsp pickle juice
  • 1/2 tsp garlic powder
  • 1/4 tsp salt (or more to taste)
  • 1/8 tsp pepper

To Assemble the Sandwich

  • 12 slices bread (to make 6 sandwiches)

Instructions

  1. Prepare Chickpeas: Drain and rinse a can of chickpeas, then pour them into a bowl.
  2. Mash Chickpeas: Using the back of a fork or a potato masher, mash the chickpeas until almost all are crushed but still have some texture.
  3. Mix Ingredients: Add vegan mayo, chopped celery, chopped dill pickles, pickle juice, garlic powder, salt, and pepper to the mashed chickpeas.
  4. Combine: Stir all ingredients thoroughly until evenly mixed to create the chickpea salad.
  5. Assemble Sandwich: Serve the chickpea salad between two slices of bread, rolled in a wrap, or on large lettuce leaves as a low-carb option.

Notes

  • On Toast: Try this chickpea salad on toast for a texture and taste similar to tuna on toast.
  • Grilled: Butter the outsides of the bread and grill the sandwich in a frying pan until golden and add vegan mozzarella for extra flavor.
  • Buffalo Chickpea Salad: Substitute mayo with vegan buffalo sauce, omit pickles, and add hot sauce for a spicy version; drizzle with vegan ranch dressing.
  • Lettuce Wraps: Serve the salad on large Romaine lettuce leaves for a gluten-free, low-carb option.
  • Veggie Packed: Add finely chopped vegetables or herbs such as dill, parsley, green onions, carrots, bell peppers, grapes, or craisins to customize your salad.
  • Curried: Add 2-3 tsp yellow curry powder, swap pickles for raisins, and use lemon juice instead of pickle juice for a flavorful curry chickpea salad variant.
