This Vegan Banana Pudding is a deliciously creamy, rich dessert featuring layers of smooth vanilla pudding, fresh bananas, crunchy vegan vanilla wafers, and fluffy vegan whipped cream. Perfect for a plant-based treat, this pudding is simple to make and delights with its classic flavors, chilled to perfection.

Ingredients

For the Pudding

  • 1 – 4.6 ounce package Cook & Serve Vanilla Pudding (130 grams)
  • 3 tablespoons Cornstarch (24 grams)
  • 2 cups Non-Dairy Milk (480 ml)
  • 1 teaspoon Vanilla Extract

Additional Ingredients

  • 10 ounces Vegan Vanilla Wafers (283 grams)
  • 5-6 Bananas
  • 12 ounces Vegan Whipped Cream

Instructions

  1. Prepare the pudding: In a small saucepan, combine the non-dairy milk, vanilla pudding mix, and cornstarch. Whisk thoroughly to dissolve all dry ingredients. Cook the mixture over medium heat, continuously stirring until it thickens and just begins to bubble. Remove from heat and let it cool slightly for a few minutes.
  2. Mash the bananas: Peel and mash two of the bananas into a wet pulp. For a smoother texture without chunks, puree the bananas in a blender instead.
  3. Combine pudding and bananas: Transfer the warm pudding into a large mixing bowl. Add the mashed bananas and vanilla extract, folding gently until fully incorporated.
  4. Cool the pudding: Cover the surface of the pudding directly with plastic wrap to prevent a skin from forming. Refrigerate for 1 to 2 hours until fully chilled.
  5. Fold in whipped cream: Remove the pudding from the refrigerator and gently fold in half of the vegan whipped cream.
  6. Assemble the pudding layers: Using a 9×9 inch baking dish, add about one-quarter of the pudding as the first layer. Then place a layer of vegan vanilla wafers followed by sliced bananas. Spread half of the remaining pudding over the bananas. Repeat layering with cookies, bananas, and the rest of the pudding, ensuring the final pudding layer covers the fruit completely to prevent browning.
  7. Refrigerate: Chill the assembled pudding for at least 4 hours or up to 24 hours to allow flavors to meld.
  8. Decorate and serve: Just before serving, top with the remaining whipped cream and garnish with additional vegan vanilla wafers or banana slices if desired.

Notes

  • Pressing plastic wrap directly on the pudding prevents a thick skin from forming during chilling.
  • Use ripe bananas for optimal sweetness and flavor.
  • If you prefer a chunk-free pudding, puree the bananas rather than mashing.
  • The pudding can be assembled up to 24 hours in advance, making it a great make-ahead dessert.
  • Store leftover pudding covered in the refrigerator for up to 3 days.
