These vegan apple pie pancakes combine the comforting flavors of caramelized apples and warm cinnamon in a naturally gluten-free, oat-based batter. Perfectly fluffy and easy to make, they are a wholesome breakfast treat suitable for those following a vegan and gluten-free diet.

Ingredients

Dry Ingredients

  • 1 ¼ cups oat flour (or oats ground in a food processor or coffee grinder; regular flour can be used if not gluten-free)
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon

Wet Ingredients

  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, allowed to sit for 5 minutes)
  • 1 tablespoon agave nectar or maple syrup
  • 1 cup vegan milk (such as almond, soy, or oat milk)
  • 2 tablespoons vegan yogurt (vegan Greek yogurt preferred)

Additional

  • 1 apple, thinly sliced
  • Oil or cooking spray for greasing the pan
  • Maple syrup, to serve

Instructions

  1. Prepare the batter: In a large bowl, combine the oat flour, baking powder, salt, and cinnamon. In another bowl, whisk together the flax egg, agave nectar or maple syrup, vegan milk, and vegan yogurt until smooth. Pour the wet ingredients into the dry ingredients and whisk until just combined, making sure not to overmix.
  2. Heat the cooking surface: Place a griddle pan or cast iron skillet over medium heat and lightly grease it with oil or cooking spray to prevent sticking.
  3. Cook the pancakes: Pour about 1/4 cup of batter onto the hot pan for each pancake, forming circles. Allow bubbles to appear on the surface, then place a few thin apple slices on top of each pancake. Let cook for 2 more minutes.
  4. Flip and finish cooking: Carefully flip the pancakes using a spatula and cook for an additional 3 minutes on the other side, until the batter is fully cooked through and pancakes are golden brown.
  5. Serve: Remove the pancakes from the pan and serve hot, drizzled with maple syrup and accompanied by caramelized apples if desired.

Notes

  • Use a food processor or coffee grinder to grind oats into flour if unavailable to purchase oat flour.
  • The flax egg should be prepared in advance by mixing ground flaxseed with water and letting it thicken for 5 minutes.
  • Vegan Greek yogurt provides a thicker texture and creaminess but regular vegan yogurt works as well.
  • Adjust cinnamon amount according to taste preference for spiciness.
  • To caramelize apples, sauté sliced apples in a small amount of vegan butter and brown sugar over medium heat until softened and golden before serving.
  • These pancakes freeze well; reheat in a toaster or oven for best texture.
