Ingredients

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 tablespoon vanilla bean paste
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 tablespoon heavy cream

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Prepare baking sheets by lining them with parchment paper or silicone liners to prevent sticking.
  2. Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, and salt until combined. Set this mixture aside.
  3. Cream Butter and Vanilla: Using an electric mixer on medium speed, beat the softened butter and vanilla bean paste until well blended and smooth.
  4. Add Sugar and Wet Ingredients: Gradually add the granulated sugar to the butter mixture, beating until the mixture becomes light and fluffy. Then, mix in the egg and heavy cream thoroughly.
  5. Incorporate Dry Mixture: Lower the mixer speed to low, and add the flour mixture. Mix just until all ingredients are combined, taking care not to overmix.
  6. Shape Cookies: Using 2 teaspoons of dough per cookie, roll the dough into small balls and place them on the prepared baking sheets. Slightly flatten the top of each ball to create the classic wafer shape.
  7. Bake: Bake one pan at a time in the preheated oven for 12 to 15 minutes or until the edges of the cookies turn golden brown.
  8. Cool: Remove the pan from the oven and place it on wire racks. Let the cookies cool for 5 minutes on the baking sheet before transferring them to the wire racks to cool completely.

Notes

  • For best results, ensure the butter is softened but not melted before starting.
  • You can substitute vanilla bean paste with pure vanilla extract if unavailable.
  • These wafers store well in an airtight container at room temperature for up to one week.
  • Flattening the dough slightly before baking helps the cookies cook evenly and achieve the right texture.
  • Baking one sheet at a time ensures even heat distribution and consistent results.
