This Tzatziki Chicken Salad is a creamy, tangy, and refreshing twist on traditional chicken salad, featuring plain Greek yogurt, fresh cucumbers, herbs, and feta cheese. Ideal for meal prep, lunches, or a light summer meal, it combines Mediterranean flavors with protein-rich chicken for a satisfying dish.

Ingredients

Dressing

  • 1 cup plain Greek yogurt
  • 1/2 cup grated English cucumber, excess moisture squeezed out
  • 3 tablespoons fresh lemon juice
  • 2 garlic cloves, peeled and grated
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Salad

  • 4 cups cooked chicken, chopped or shredded
  • 1 cup diced cucumber
  • 1/2 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese

Instructions

  1. Prepare the dressing: In a medium bowl, combine the Greek yogurt, grated cucumber, lemon juice, garlic, fresh dill, fresh parsley, sea salt, and freshly ground black pepper. Stir thoroughly until the mixture is smooth and well combined.
  2. Combine the salad ingredients: Add the chopped or shredded cooked chicken, diced cucumber, diced celery, diced red onion, and crumbled feta cheese to the dressing bowl. Stir everything together gently until the salad ingredients are evenly coated with the tzatziki dressing. Adjust seasoning with additional lemon juice, salt, or pepper, according to your taste preference.
  3. Serve: Enjoy the tzatziki chicken salad over mixed greens, with pita chips, stuffed in a pita pocket, wrapped in lettuce leaves, or as a sandwich or wrap filling. Optionally, garnish with chopped tomatoes, kalamata olives, extra feta, and fresh herbs to enhance flavor and presentation.

Notes

  • Storage: Store your tzatziki chicken salad in an airtight container in the refrigerator. Consume within 3 to 4 days for best freshness and flavor.
  • Flavor development: The flavors tend to meld and intensify over time, so give the salad a good stir before serving if liquid separation occurs.
