Ingredients
Fresh Vegetables
6 medium vine-ripened tomatoes (stem removed)
2 jalapeño peppers
1 poblano pepper
1 cup green onion (diced)
1 lime (juice of)
2 cloves garlic (minced)
Canned and Herbs
1 cup canned diced tomatoes
1 cup chopped fresh cilantro
Seasoning
1 tbsp chicken bouillon powder or sea salt
Instructions
Blister the vegetables: Heat a large skillet over medium-high heat. Place the whole tomatoes, jalapeño peppers, and poblano pepper directly in the skillet. Allow them to cook, turning occasionally, until several sides blister and char, approximately 20 minutes.
Cool down the vegetables: Remove the skillet from heat and set the blistered vegetables aside to cool completely. This helps make them easier to handle and enhances flavor melding.
Prepare the peppers and tomatoes: Once cooled, remove the stems from the peppers. For the jalapeños, remove seeds for milder heat, or keep some seeds to increase spiciness. Cut the tomatoes and peppers into large chunks.
Blend the salsa ingredients: Add the chopped tomatoes, blistered peppers, diced green onions, lime juice, and canned diced tomatoes into a blender. Pulse briefly, about 5 seconds, just until combined but still chunky.
Mix in garlic and cilantro: Add the minced garlic, chopped cilantro, and chicken bouillon powder (or sea salt) to the blender. Pulse again for about 15 seconds until the mixture is well blended but retains some texture.
Chill and serve: Transfer the salsa to a large bowl and refrigerate until thoroughly chilled. Serve cold with tortilla chips or as a flavorful accompaniment to your favorite Mexican dishes.
Notes
For extra heat, leave some jalapeño seeds in the salsa.
Blistering vegetables adds a smoky flavor that enhances the salsa’s depth.
You can substitute chicken bouillon powder with sea salt for a vegetarian option.
Refrigerate for at least 30 minutes for best flavor melding.
Store leftover salsa in an airtight container in the refrigerator for up to 5 days.
