Ingredients

Peanut Sauce

  • 1/2 cup natural peanut butter
  • 1/2 cup water
  • 1/4 cup low sodium soy sauce (or tamari for gluten free)
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lime juice (or rice vinegar)
  • 3 tablespoons agave (or brown sugar)
  • 1 teaspoon Sriracha hot sauce

Noodles and Vegetables

  • 8 ounces spaghetti noodles (or rice noodles)
  • 1 cup shelled edamame
  • 1/2 cup chopped cucumbers (see Notes for options)
  • 1 cup shredded carrots
  • 1 red bell pepper, seeded and thinly sliced
  • 2 green onions, chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts

Instructions

  1. Make the Peanut Sauce: In a small to medium-sized bowl, whisk together the natural peanut butter, water, low sodium soy sauce, minced garlic, fresh lime juice, agave, and Sriracha hot sauce until the mixture is smooth and creamy. Set the sauce aside for later use.
  2. Prepare the Noodles: Cook your choice of noodles according to the package instructions until al dente. Once cooked, drain the noodles thoroughly and transfer them to a large mixing bowl.
  3. Combine Ingredients: To the bowl with noodles, add the shelled edamame, chopped cucumbers, shredded carrots, sliced red bell pepper, chopped green onions, chopped cilantro, and chopped peanuts. Pour the prepared peanut sauce over the mixture and toss everything together until the noodles and vegetables are evenly coated with the sauce.
  4. Serve: Serve the Thai peanut noodles immediately. Optionally, garnish with lime wedges, additional chopped peanuts, cilantro, and extra hot sauce for an added kick. Enjoy this flavorful and nutritious dish!

Notes

  • For a gluten-free version, use tamari instead of soy sauce and opt for rice noodles instead of spaghetti.
  • If you prefer a different crunch, substitute cucumbers with thinly sliced snap peas or shredded cabbage.
  • Adjust the level of spiciness by adding more or less Sriracha hot sauce according to your taste.
  • This dish is best served fresh but can be refrigerated for up to 2 days; if storing, keep sauce separate to maintain noodle texture.
  • For added protein, consider adding grilled chicken, tofu, or shrimp.
