Ingredients

Pizza Dough

  • 1/4 batch Artisan Pizza Dough (or 1 - 11 inch pizza crust)

Curry Sauce

  • 1/4 cup coconut milk
  • 1 tbsp yellow Thai curry paste

Toppings

  • 1/2 cup red bell peppers, thinly sliced (about 1/2 pepper)
  • 1/2 cup carrots, cut into thin ribbons
  • 2 tbsp red onion, thinly sliced
  • 1 1/2 cups mozzarella, shredded

Garnishes

  • Cilantro, for garnish
  • Green onions, for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 475°F (246°C). If you have a pizza stone, place it on the center rack to heat up, which will help achieve a crispier crust.
  2. Prepare Curry Sauce: In a small bowl, thoroughly mix the coconut milk with the yellow Thai curry paste until the mixture is smooth and evenly combined.
  3. Assemble the Pizza: Roll out the artisan pizza dough on a floured baking sheet or on parchment paper if you plan to use a pizza stone. Spread the curry sauce evenly over the dough as the base layer, then layer the thinly sliced red bell peppers, carrot ribbons, and red onions over the sauce. Finally, sprinkle the shredded mozzarella evenly on top.
  4. Bake the Pizza: Transfer the pizza to the oven. If using a stone, slide the pizza with the parchment paper directly onto it. Bake for 9-11 minutes, until the crust is lightly browned and the mozzarella has melted and turned golden.
  5. Cool and Garnish: Remove the pizza from the oven and place it on a wire rack to cool slightly for a couple of minutes. This prevents the crust from becoming soggy.
  6. Serve: Slice the pizza and garnish generously with fresh green onions and cilantro before serving. Enjoy your flavorful Thai Curry Pizza!

Notes

  • You can use store-bought pizza dough or pre-made crust to save time.
  • Adjust the amount of curry paste depending on your spice preference.
  • Thinly slicing vegetables ensures they cook through evenly during the short bake time.
  • Using a pizza stone helps achieve a crispier crust but is optional.
  • Leftover pizza can be reheated in the oven to maintain crispiness.
