Ingredients

For the Chicken Filling

  • 1 Tablespoon olive oil (vegetable or canola oil)
  • 1 pound ground chicken
  • 4 cloves garlic, minced
  • 1/2 sweet onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup carrot, shredded
  • 1/2 cup finely shredded cabbage
  • 3 green onions, chopped

For the Sauce

  • 1/4 cup fresh cilantro, chopped
  • 1/3 cup sweet chili sauce (found in the Asian section of the grocery store)
  • 1 Tablespoon chunky peanut butter, or smooth
  • 1/4 teaspoon freshly grated ginger
  • 2 teaspoons low-sodium soy sauce
  • Crushed red pepper flakes, to taste

To Serve

  • Boston Bibb lettuce, or romaine lettuce leaves

Instructions

  1. Heat the oil and cook chicken: In a large skillet, heat olive oil over medium heat. Add the ground chicken, minced garlic, chopped sweet onion, salt, and pepper. Cook, stirring occasionally, until the chicken is fully cooked through and no longer pink.
  2. Add the vegetables: Stir in the shredded carrots, finely shredded cabbage, and chopped green onions. Continue cooking for another 4-5 minutes or until the vegetables are tender but still crisp.
  3. Prepare the sauce: In a small bowl, combine the sweet chili sauce, freshly grated ginger, chunky peanut butter, low-sodium soy sauce, and crushed red pepper flakes. Mix well until smooth and creamy.
  4. Combine sauce and cilantro: Pour the sauce over the chicken and vegetable mixture in the skillet. Add the chopped fresh cilantro and stir everything together to evenly coat.
  5. Assemble the wraps: Spoon the flavorful chicken mixture into fresh Boston Bibb or romaine lettuce leaves, folding the leaves to form wraps. Serve immediately and enjoy!

Notes

  • Ground Chicken: You can substitute ground turkey if preferred.
  • Vegetable Variations: Feel free to use leftover vegetables such as chopped celery, bok choy, bean sprouts, shredded Brussels sprouts, zucchini, or summer squash. Sauté them until tender when adding to the skillet. If adding extra veggies, consider making a larger batch of sauce.
  • Vegetarian Option: Replace the ground chicken with tofu or omit the meat completely and add extra vegetables.
  • Make Ahead: Vegetables can be chopped and sauce prepared 2-3 days in advance. Leftovers store well in the refrigerator and reheat nicely.
  • Gluten-Free Adaptations: Use gluten-free sweet chili sauce and soy sauce to make this recipe gluten free.
