Ingredients

Dry ingredients:

  • 1 ¾ cups (210g) all purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon cardamom
  • ¼ teaspoon ground cloves
  • ¼ teaspoon allspice
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon kosher salt

Wet ingredients:

  • ½ cup (1 stick, 113g) salted butter, at room temperature
  • ½ cup (100g) granulated sugar
  • ½ cup (60g) powdered sugar
  • 1 large egg, at room temperature
  • 1 tablespoon plain or vanilla whole-milk Greek yogurt (or sour cream)
  • 2 teaspoons vanilla extract

Vanilla Bean Cream Cheese Frosting:

  • 4 tablespoons (57g) salted butter, at room temperature
  • 4 ounces cream cheese, at room temperature
  • 1 ½ cups (180g) powdered sugar
  • 1 vanilla bean, split and seeds removed (or ¾ teaspoon vanilla extract)
  • 1 to 3 teaspoons milk (or eggnog), to make the frosting creamy

For decoration:

  • Gold sparkling sugar, pearl or gold pearl sprinkles

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees F and line a large baking sheet with parchment paper to prevent sticking and promote even baking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, cornstarch, cinnamon, ground ginger, cardamom, cloves, allspice, baking powder, baking soda, and kosher salt until fully combined.
  3. Mix Wet Ingredients: In the bowl of an electric mixer fitted with the paddle attachment, beat the softened butter with granulated sugar and powdered sugar until creamy and well incorporated, about 1 minute. Add the egg, Greek yogurt (or sour cream), and vanilla extract, then mix on medium speed until combined, scraping down the bowl as needed.
  4. Combine Dry and Wet: Gradually add the dry ingredient mixture to the wet mixture and mix on medium-low speed until a smooth dough forms, ensuring all ingredients are well integrated.
  5. Shape Cookies: Using a small cookie scoop or tablespoon, portion dough into balls and roll them between your hands. Place dough balls on the prepared baking sheet spaced 2 inches apart to allow for spreading.
  6. Bake Cookies: Bake for 10 to 12 minutes until the cookies appear slightly underbaked—this keeps them soft inside. Remove from oven and let cool on the baking sheet for 5 to 10 minutes before transferring to a wire rack to cool completely.
  7. Prepare Frosting: In a clean mixer bowl, beat the softened butter and cream cheese on high speed until fluffy, about 1 minute. Gradually add powdered sugar, vanilla bean seeds (or vanilla extract), and 1 to 3 teaspoons of milk or eggnog. Begin beating slowly and then increase to high speed, beating 1 to 2 minutes until creamy and smooth.
  8. Frost Cookies: Spread the vanilla bean cream cheese frosting evenly over the cooled cookies.
  9. Decorate: Sprinkle with gold sparkling sugar, pearls, or gold pearl sprinkles to add a festive touch.
  10. Serve and Enjoy: Let the frosting set slightly, then serve the cookies to enjoy their soft, spiced flavor paired with creamy frosting. Makes approximately 24 cookies.

Notes

  • Make sure the egg and butter are at room temperature for better mixing and texture.
  • Do not overbake the cookies; they should look slightly underbaked to ensure softness.
  • You can substitute sour cream for Greek yogurt in the dough if preferred.
  • The frosting can be adjusted in consistency by adding more or less milk or eggnog.
  • Store cookies in an airtight container in the refrigerator if not consumed within a couple of days; bring to room temperature before serving.
  • Add your choice of sprinkles or leave them plain for a simple presentation.
