Delicious and easy Taco Potatoes recipe featuring crispy air-fried seasoned potatoes layered with flavorful taco-seasoned ground beef and melted Mexican cheese. Perfect for a quick and satisfying meal with optional fresh toppings like pico de gallo, guacamole, and sour cream.

Ingredients

Potatoes

  • 2 pounds russet potatoes, peeled and small diced
  • 3-4 Tablespoons oil
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Beef

  • 1 pound ground beef
  • 1 packet taco seasoning
  • Water (amount called for on the back of the taco seasoning packet)

Toppings

  • 8 ounce bag Mexican shredded cheese
  • Optional toppings: pico de gallo, guacamole, sour cream

Instructions

  1. Prepare the Potatoes: Peel and small dice 2 pounds of russet potatoes. Coat them with 3-4 tablespoons of oil, then season with 1 ½ teaspoons salt, ½ teaspoon pepper, 1 teaspoon garlic powder, and 1 teaspoon onion powder. Mix thoroughly to ensure all potato pieces are evenly coated.
  2. Air Fry the Potatoes: Place the seasoned potatoes in the air fryer basket. Cook at 400°F for 18-20 minutes, shaking the basket 2-3 times during cooking to promote even crisping.
  3. Cook the Ground Beef: While the potatoes cook, brown and crumble 1 pound of ground beef in a skillet over medium heat. Drain excess grease to reduce fat content.
  4. Add Taco Seasoning: After draining, add 1 packet of taco seasoning and the specified water amount from the seasoning packet. Stir well and cook according to the packet's directions until the beef mixture thickens and is well seasoned. Remove from heat when done.
  5. Assemble the Taco Potatoes: Layer the cooked air-fried potatoes on a serving dish. Top with the seasoned ground beef, then sprinkle evenly with 8 ounces of Mexican shredded cheese.
  6. Add Optional Toppings: Garnish with desired taco toppings such as pico de gallo, guacamole, and sour cream to enhance flavor and texture.

Notes

  • Shaking the air fryer basket during cooking ensures even crispiness of the potatoes.
  • Drain the ground beef well to avoid greasy topping on the potatoes.
  • Adjust seasoning quantities to taste, especially salt.
  • Using fresh toppings like pico de gallo adds a burst of flavor and freshness.
  • This recipe can be made gluten free if the taco seasoning is gluten free.
