Perfect for a comforting weeknight meal that brings the classic taco flavors into a satisfying casserole.

Ingredients

Meat and Vegetables

  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 1 large onion, diced
  • 2 bell peppers, diced
  • 4 cloves garlic, minced
  • 4 cups gold potatoes, diced (about 1.5 lbs)

Seasoning and Cheese

  • 1 oz taco seasoning (1 oz packet or about 3 tbsp; preferably Siete taco seasoning)
  • 1 1/2 cups salsa
  • 1 1/2 cups Mexican blend cheese, shredded (divided)

Toppings

  • Shredded lettuce
  • Cilantro
  • Avocado
  • Tomatoes
  • Limes
  • Sour cream or Greek yogurt

Instructions

  1. Preheat the Oven: Set your oven to 400 degrees Fahrenheit to prepare for baking the casserole later.
  2. Brown the Ground Beef: Heat olive oil in a large skillet over medium heat. Add the ground beef and break it up with a spatula. Cook for 4-5 minutes until browned and cooked through.
  3. Add the Vegetables and Potatoes: Stir in the diced bell peppers, onion, garlic, and diced potatoes. Cover the skillet and cook for 10 minutes, stirring once halfway through to ensure even cooking and prevent sticking.
  4. Finish Cooking the Potatoes: Remove the lid and continue cooking uncovered for another 10 minutes, stirring occasionally, until the potatoes begin to brown and soften.
  5. Add Seasoning and Cheese: Turn off the heat. Stir in the taco seasoning, salsa, and 1 cup of shredded Mexican blend cheese until well combined.
  6. Prepare for Baking: Transfer the mixture to a 9x9-inch baking dish if your skillet isn't oven-safe. Sprinkle the remaining ½ cup of cheese evenly on top.
  7. Bake the Casserole: Place the dish in the oven and bake for 10 minutes, allowing the cheese to melt and the flavors to meld.
  8. Serve with Toppings: Remove from the oven and serve with shredded lettuce, cilantro, sliced avocado, diced tomatoes, lime wedges, and a dollop of sour cream or Greek yogurt for a fresh and creamy finish.

Notes

  • Use gold potatoes as they hold their shape well during cooking.
  • If you prefer a spicier casserole, add extra taco seasoning or hot sauce to taste.
  • For a lower-fat version, use lean ground turkey or chicken instead of beef.
  • The casserole can be prepared in an oven-safe skillet to save on cleanup.
  • Leftovers reheat well for quick lunches or dinners.
