This Taco Bell Crispy Fiesta Potatoes recipe is a flavorful copycat version of the popular fast-food side dish. Parboiled russet potatoes are seasoned with a blend of spices and corn starch, then baked to crispy perfection using avocado oil. Perfect as a snack or side, these crispy potatoes deliver a deliciously spiced, crunchy exterior with a tender inside.

Ingredients

Potatoes

  • 3 lbs. russet potatoes, washed

Seasoning & Coating

  • 1/4 cup avocado oil
  • 1/2 cup corn starch
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon cumin

Instructions

  1. Parboil the Potatoes: Place the washed russet potatoes into a large pot and cover them with water about 1-2 inches above the potatoes. Bring the water to a boil over high heat and cook for about 20 minutes until the potatoes are slightly fork-tender but not fully cooked, as they will finish cooking in the oven.
  2. Preheat the Oven: While the potatoes cook, preheat your oven to 425°F (220°C). Line a full-sized baking sheet or two half-sized sheets with parchment paper or a silicone baking mat for easy cleanup and to prevent sticking.
  3. Prepare the Spice Mixture: In a small bowl, combine the corn starch, garlic powder, onion powder, salt, black pepper, paprika, cayenne pepper, and cumin. Mix well to create a uniform spice blend.
  4. Dice and Season Potatoes: Once the potatoes are parboiled, drain and dice them into 1-inch squares. Place the diced potatoes into a large bowl, add the avocado oil, and gently toss them until fully coated. Sprinkle the prepared spice and corn starch mixture evenly over the potatoes and mix carefully to coat all sides evenly.
  5. Arrange on Baking Sheet: Spread the seasoned potatoes out in a single layer on the prepared baking sheet(s) to ensure even cooking and crispiness.
  6. Bake to Crisp: Bake the potatoes in the preheated oven for 40 minutes, stirring or flipping them halfway through the baking time to achieve an even, crispy texture on all sides.
  7. Cool and Serve: After baking, allow the potatoes to cool slightly before serving. Enjoy your crispy, flavorful Fiesta Potatoes!

Notes

  • Parboiling the potatoes is key to achieving a crispy exterior and soft interior.
  • Use parchment paper or a silicone baking mat to prevent sticking and make cleanup easier.
  • Adjust the cayenne pepper to suit your preferred spice level.
  • For extra crispiness, avoid overcrowding the baking sheet.
  • These potatoes are best served fresh but can be reheated in the oven to retain crispness.
