Ingredients

Dough Ingredients

  • 3/4 cup warm whole milk
  • 2 1/4 teaspoons instant yeast
  • 2 tablespoons honey
  • 3 large eggs
  • 3 1/2 – 4 cups all-purpose flour, plus more for rolling
  • 1 teaspoon kosher salt
  • 6 tablespoons salted butter, at room temperature, plus more for serving

Garlic Herb Butter Mixture

  • 1-2 cloves garlic, grated or finely chopped
  • 1/4 cup freshly grated parmesan cheese
  • 1/2 cup fresh basil, finely chopped
  • 2 tablespoons chopped fresh thyme
  • 1 tablespoon chopped fresh sage

Instructions

  1. Mix Dough: In the bowl of a stand mixer, combine warm milk, instant yeast, honey, eggs, 3 1/2 cups flour, and kosher salt. Using the dough hook, mix until flour is fully incorporated, about 4-5 minutes. Add 2 tablespoons of room temperature butter and mix for another 2-3 minutes until combined. If dough remains sticky, add up to 1/2 cup more flour until dough is smooth to the touch.
  2. First Rise: Cover the bowl with plastic wrap and allow the dough to rise at room temperature for 1 hour or until it has doubled in size.
  3. Prepare Herb Butter: In a small bowl, mix together the remaining 4 tablespoons of butter, grated garlic, parmesan cheese, chopped basil, thyme, and sage until well combined.
  4. Shape Dough and Add Filling: Punch down the risen dough then roll it out on a lightly floured surface into a 12 x 18 inch rectangle. Evenly spread the garlic herb butter over the dough. Starting from the long edge closest to you, roll the dough tightly into a log, pinching the edges to seal.
  5. Cut and Twist: Using a sharp knife, cut the dough log lengthwise in half leaving one small end intact. Expose the filling by turning the halves upward and cross the dough ropes over each other repeatedly to form a long twisted dough braid.
  6. Form the Coil and Second Rise: Coil half the rope into a snake shape, stopping at the halfway point, then coil the other half in the opposite direction. Carefully transfer to a parchment-lined baking sheet, cover loosely, and let rise in a warm place for 45 minutes.
  7. Bake: Preheat oven to 350°F (175°C). Bake the bread for 30-35 minutes until the top is golden brown and the bread is fully cooked. Remove from oven and brush with additional butter. Slice and serve warm.

Notes

  • Make sure the milk is warm, not hot, to activate the yeast properly.
  • If the dough is too sticky, add flour gradually to avoid a dense bread.
  • Use fresh herbs for the best flavor in the garlic herb butter mixture.
  • This bread is best served warm, brushed with extra butter.
  • You can substitute fresh herbs with dried herbs, using about one-third the amount.
  • Allow adequate rising times for a soft and airy texture.
