This Sweet Potato Shepherd's Pie is a wholesome and flavorful twist on a classic comfort dish, using lean turkey and vibrant sweet potatoes for a hearty, nutritious meal perfect for family dinners.

Ingredients

Sweet Potato Topping

  • 1.5 pounds Sweet Potatoes (peeled and chopped)
  • ½ teaspoon Italian Seasoning Blend
  • Sea salt and pepper, to taste

Filling

  • 1 tablespoon Olive Oil
  • 1 Medium Yellow Onion (diced)
  • 1½ pounds Lean Turkey Meat
  • 2 tablespoons Tomato Paste
  • 3-4 Garlic Cloves (minced)
  • ½ teaspoon Dried Oregano
  • 1 tablespoon Smoked Paprika
  • 1 Cup Chicken or Beef Broth
  • 1 Cup Frozen Peas (or any other veggies like corn, carrots, defrosted)

Instructions

  1. Preheat Oven: Preheat the oven to 375°F to prepare for baking the assembled shepherd's pie.
  2. Cook Sweet Potatoes: Place the peeled and chopped sweet potatoes in a large saucepan with enough water to cover them. Bring to a boil and cook for about 10 minutes or until tender.
  3. Mash Potatoes: Drain the sweet potatoes and mash them. Season with sea salt, pepper, and ½ teaspoon Italian seasoning blend to taste.
  4. Sauté Onion and Garlic: Heat olive oil in a large nonstick pan over medium-high heat. Sauté the diced yellow onion for 3-4 minutes until softened, then add the minced garlic and cook for about one minute more.
  5. Cook Turkey Meat: Add the lean turkey meat to the pan, breaking it up with a wooden spoon, and cook until fully browned and cooked through.
  6. Add Seasonings and Broth: Stir in tomato paste, dried oregano, smoked paprika, and salt and pepper. Pour in the chicken or beef broth and simmer until the liquid reduces slightly. Then mix in the frozen peas (or other vegetables) until heated through.
  7. Assemble Pie: Spread the turkey mixture evenly in a 2-quart baking dish. Top with the mashed sweet potatoes, spreading evenly to the edges.
  8. Bake: Bake in the preheated oven for 25-30 minutes or until the mashed potatoes begin to brown slightly on top.
  9. Rest and Serve: Allow the shepherd's pie to rest a few minutes after baking, then serve warm and enjoy your comforting meal.

Notes

  • You can substitute frozen peas with other vegetables like corn or carrots based on preference.
  • For a richer flavor, use beef broth instead of chicken broth.
  • Make sure to mash the sweet potatoes smoothly for the best topping texture.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven.
  • Adjust seasoning to taste, especially salt and pepper, before baking.
