A fresh and vibrant Summer Peach Spinach Salad featuring organic spinach, juicy peaches, creamy avocado, tangy goat cheese, and toasted almonds, all tossed in a homemade balsamic vinaigrette dressing. Perfect for a light, nutritious meal or side dish during warm weather.

Ingredients

Salad Ingredients

  • 4-6 cups organic spinach
  • 2 large peaches, sliced
  • 1 avocado, diced
  • ½ small red onion, very thinly sliced
  • ½ cup goat cheese crumbles (or substitute feta)
  • ½ cup sliced toasted almonds*

Dressing Ingredients

  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 garlic clove, minced
  • ½ teaspoon Dijon mustard
  • Optional: 1-2 teaspoons sugar, pure maple syrup, or honey to sweeten dressing
  • Freshly ground salt and pepper, to taste

Instructions

  1. Prepare the Dressing: In a medium bowl, whisk together the balsamic vinegar, extra virgin olive oil, minced garlic, Dijon mustard, salt, and pepper until fully combined. If desired, add 1-2 teaspoons of sugar, pure maple syrup, or honey to enhance the sweetness of the dressing. Set aside.
  2. Toss the Spinach: Place the organic spinach in a large bowl. Drizzle with your preferred amount of the prepared balsamic vinaigrette and toss gently to coat the leaves evenly.
  3. Assemble the Salad: Arrange the sliced peaches, diced avocado, thinly sliced red onion, goat cheese crumbles, and toasted almond slices over the dressed spinach. Toss very gently again to combine all ingredients without bruising the fruit or spinach.
  4. Serve: Serve the salad immediately to enjoy the fresh flavors and crisp textures. This recipe yields approximately 4 servings.

Notes

  • Use ripe but firm peaches to avoid mushiness in the salad.
  • To toast almonds, heat them in a dry skillet over medium heat for 3-5 minutes until golden and fragrant, stirring frequently.
  • Dressing can be prepared in advance and stored in the refrigerator for up to 3 days; whisk before using.
  • For a vegan version, substitute goat cheese with a plant-based cheese or omit entirely.
  • Adjust sweetness of the dressing based on the ripeness of peaches and personal preference.
