This fresh and creamy Strawberry Parfait combines layers of fluffy cream cheese and Greek yogurt mixture with juicy strawberries and crunchy granola for a delightful, easy-to-make dessert or breakfast treat, ready in just 15 minutes.

Ingredients

Parfait Mixture

  • 8 ounces cream cheese (softened)
  • 1 cup Greek yogurt
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract

Fruit and Toppings

  • 1 ½ cups strawberries (washed, hulled, and sliced)
  • 1 cup granola (store-bought or homemade)

Instructions

  1. Whisk Cream Cheese: In a mixing bowl, place the softened cream cheese and use a hand mixer or whisk to beat it until it becomes light and fluffy, creating a smooth base for the parfait.
  2. Add Yogurt and Flavorings: Add the Greek yogurt, honey, and vanilla extract to the cream cheese mixture and continue whisking until all ingredients are well combined and creamy.
  3. Layer Parfait: Begin layering by spooning some of the cream cheese and yogurt mixture into the bottom of serving glasses or bowls. Add a layer of sliced strawberries on top, followed by a layer of granola. Repeat these layers until the glass is filled, finishing with a dollop of the cream cheese mixture and a strawberry slice on top.
  4. Chill: Place the assembled parfaits in the refrigerator and chill for at least 30 minutes to allow the flavors to blend and the parfait to firm up slightly before serving.

Notes

  • For a vegan version, substitute cream cheese and Greek yogurt with plant-based alternatives and use maple syrup instead of honey.
  • Use fresh, ripe strawberries for the best flavor and texture.
  • Granola can be homemade or purchased; choose your preferred flavor to customize.
  • This parfait can be assembled ahead and stored in the refrigerator for up to 24 hours.
  • For extra crunch, add granola just before serving instead of during layering.
