Spinach Feta Egg Muffins are a simple, protein-packed breakfast treat perfect for meal prepping. Made with just six basic ingredients, these savory muffins combine fluffy eggs, creamy cottage cheese, fresh spinach, and tangy feta cheese baked to perfection. They’re quick to prepare, delicious, and versatile enough to customize with your favorite add-ins.

Ingredients

Egg Mixture

  • 6 large Eggs
  • 1 cup Cottage Cheese
  • ½ teaspoon Kosher Salt
  • ¼ teaspoon Black Pepper

Fillings

  • ½ cup Chopped Baby Spinach
  • ⅓ cup Crumbled Feta Cheese

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 350°F (175°C). Grease a muffin tin generously with olive oil or non-stick spray to prevent sticking and set it aside.
  2. Mix Egg Base: In a mixing bowl, add the 6 large eggs, 1 cup cottage cheese, ½ teaspoon kosher salt, and ¼ teaspoon black pepper. Gently beat the mixture until fully combined but still slightly fluffy.
  3. Add Fillings: Evenly sprinkle the chopped baby spinach and crumbled feta cheese into the bottom of each greased muffin cup to ensure each muffin is flavorful.
  4. Assemble Muffins: Pour the egg mixture into each muffin cup over the spinach and feta filling, filling each just over halfway to allow room for rising.
  5. Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the edges are lightly browned and the tops look set and cooked through.
  6. Cool and Serve: Remove the muffins from the oven and allow them to cool in the tin for at least 5 minutes. After cooling, carefully remove the muffins from the tin and serve warm or store for later.
