Ingredients

Vegetables

  • 6 ounces baby bella mushrooms, sliced
  • 1/2 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 large handful fresh baby spinach
  • 1/2 avocado, sliced

Eggs & Dairy

  • 4 large eggs, whisked
  • 2 tablespoons butter, divided

Seasonings & Garnishes

  • Fine sea salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh herbs (dill, cilantro, basil or parsley), for topping

Instructions

  1. Sauté the veggies: Melt 1 tablespoon of butter over medium-high heat in a skillet. Add the sliced mushrooms and red onion, sautéing and stirring occasionally until the mushrooms are nearly browned. Add minced garlic along with a generous pinch of salt and freshly ground black pepper, then sauté for 1 minute, stirring occasionally. Add the fresh baby spinach and toss gently for 1-2 minutes until wilted. Push the entire veggie mixture to the back side of the pan and reduce heat to medium-low.
  2. Scramble the eggs: Add the remaining 1 tablespoon of butter to the front side of the pan and swirl it around to melt. Pour in the whisked eggs with a pinch of salt. Cook slowly, stirring gently and frequently, until the eggs are softly scrambled. Turn off the heat and gently combine the scrambled eggs with the sautéed vegetable mixture in the pan.
  3. Season: Taste your scramble and add additional sea salt and freshly ground black pepper if needed to adjust seasoning.
  4. Serve: Plate the scramble warm alongside sliced avocado and garnish generously with fresh herbs of your choice. Enjoy this nourishing and flavorful breakfast!
