Ingredients

Chickpeas

  • 1 (15-ounce) can chickpeas

Seasoning and Oil

  • 1 ½ teaspoons olive oil
  • ½ teaspoon salt
  • Easy Version: 1 tablespoon Mrs. Dash Southwest Chipotle Seasoning (or your choice of seasoning mix)
  • Scratch Version: 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon turmeric
  • ¼ teaspoon cumin

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) and line a baking pan with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Chickpeas: Drain the canned chickpeas using a strainer, shaking to remove as much water as possible. Spread the chickpeas on a paper towel and pat dry thoroughly, or leave them to air dry for a few minutes to ensure they roast crispier.
  3. Coat Chickpeas with Oil: In a mixing bowl, pour in the olive oil and add the dried chickpeas. Stir well to make sure each chickpea is evenly coated with oil.
  4. Add Seasoning: For the easy version, sprinkle the Mrs. Dash Southwest Chipotle Seasoning over the chickpeas and stir until all are fully coated. For the scratch version, combine the chili powder, smoked paprika, turmeric, and cumin in a small bowl, then sprinkle over the chickpeas and mix thoroughly to coat evenly.
  5. Arrange on Baking Pan: Spread the seasoned chickpeas evenly on the prepared baking pan, making sure they are not touching each other to allow for even roasting.
  6. Roast Chickpeas: Place the baking pan in the preheated oven and roast the chickpeas for 20 to 25 minutes, or until they are crispy on the outside. Shake the pan or stir once halfway through for even cooking if desired.
  7. Cool and Season: Remove the chickpeas from the oven and let them cool slightly. While still warm, sprinkle with salt and pepper to taste, then enjoy your crunchy spicy snack!

Notes

  • Patting the chickpeas dry is crucial for crispiness.
  • You can customize the spice blend to your preference by adding cayenne for extra heat or garlic powder for more flavor.
  • Store leftover roasted chickpeas in an airtight container at room temperature for up to 3 days to maintain crunchiness.
  • For a less spicy version, reduce or omit the chili powder and Mrs. Dash seasoning.
  • If you prefer, you can roast them on a wire rack above the baking sheet for even air circulation.
