Ingredients

Noodles

  • 16 ounces brown rice noodles

Sauce and Seasonings

  • 3 large cloves garlic (or 4-5 small cloves), finely minced
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon oil (such as olive oil)
  • 2/3 cup creamy peanut butter
  • 4 tablespoons low sodium tamari or soy sauce
  • 1/3 to 1 cup hot water
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 to 2 tablespoons sriracha
  • 1 to 2 tablespoons maple syrup or honey
  • 1/2 teaspoon red pepper flakes (optional)
  • Optional: 2 teaspoons chili garlic sauce

Garnish

  • Crushed peanuts
  • Chopped scallions
  • Additional red pepper flakes

Instructions

  1. Boil Water: Bring a large pot of water to a boil to prepare for cooking the noodles.
  2. Cook Noodles: Add the brown rice noodles to the boiling water and cook according to the package instructions until tender. Drain and set aside.
  3. Sauté Garlic: Finely mince the garlic cloves. Heat 1 tablespoon of oil in a sauté pan over low heat and add the garlic. Cook gently for about 2 minutes until golden brown.
  4. Add Ginger: Add the freshly grated ginger to the pan with the garlic and sauté for an additional 1 minute to release the flavors.
  5. Combine Sauce Ingredients: Remove the pan from heat. Add the peanut butter, low sodium tamari or soy sauce, rice vinegar, toasted sesame oil, sriracha, maple syrup or honey, and red pepper flakes (and chili garlic sauce if using). Whisk everything together starting with 1/3 cup of hot water, adding more water as needed to create a smooth, pourable sauce.
  6. Adjust Consistency and Flavor: Depending on your peanut butter brand and preference, adjust the amount of hot water to achieve your desired sauce consistency. Taste and add more soy sauce or sriracha if you want it saltier or spicier.
  7. Combine Sauce and Noodles: Pour about half of the peanut sauce over the cooked noodles and toss gently to combine, ensuring the noodles are evenly coated.
  8. Taste and Adjust: Taste the noodles with the sauce before adding the remainder. Add more sauce as desired, depending on how saucy you like your noodles.
  9. Serve: Serve the noodles garnished with crushed peanuts, chopped scallions, and additional red pepper flakes for extra flavor and crunch. Enjoy with your choice of vegetables or protein.

Notes

  • Use hot water when mixing with peanut butter for easier blending.
  • Adjust red pepper flakes and sriracha to your preferred spice level or omit for less heat.
  • Extra sauce can be saved for later or used as a dip for vegetables.
  • Brown rice noodles can be substituted with other rice noodles or even wheat noodles if preferred.
  • Add cooked chicken, tofu, or vegetables to make it a more substantial meal.
