Ingredients

Spread Ingredients

  • 12 ounces frozen shelled edamame, thawed (340g)
  • ¼ cup creamy natural peanut butter (64g)
  • ½ large ripe avocado
  • 2 cloves garlic, minced
  • 2-5 tablespoons cold water (as needed)
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh lime juice
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons maple syrup
  • 1-2 teaspoons sriracha (adjust to taste)
  • 1 teaspoon toasted sesame oil

Toppings & Serving

  • Toasted sourdough or multigrain bread
  • Thin ribbons of carrots
  • Sliced baby cucumber
  • Chopped roasted peanuts
  • Fresh cilantro
  • Sesame seeds
  • Lime wedges

Instructions

  1. Combine Ingredients: In a blender or food processor, add the thawed shelled edamame, creamy peanut butter, ripe avocado, minced garlic, 2 tablespoons cold water, rice vinegar, fresh lime juice, low-sodium soy sauce, grated fresh ginger, maple syrup, sriracha, and toasted sesame oil.
  2. Blend Smooth: Blend all ingredients until the mixture is smooth and creamy. Gradually add more water by the tablespoon if needed to achieve a thick, spreadable consistency. Taste the spread and adjust by adding extra lime juice for brightness, soy sauce for savoriness, or more sriracha to increase the heat according to your preference.
  3. Prepare Toast and Serve: Toast slices of sourdough or multigrain bread to your liking. Generously spread the edamame mixture onto the toasted bread. Top with thin carrot ribbons, sliced baby cucumber, chopped roasted peanuts, fresh cilantro, and a sprinkle of sesame seeds. Serve with lime wedges on the side for an extra zesty squeeze.

Notes

  • Use ripe avocado for a creamier, smoother spread.
  • Adjust sriracha amount to control the heat level.
  • If you prefer a chunkier texture, pulse the blender less.
  • This spread works great as a dip or sandwich filling as well.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Make sure to thaw the edamame completely before blending.
