This Spaghetti Squash Chow Mein is a healthy, paleo-friendly twist on the classic takeout favorite, using roasted spaghetti squash noodles tossed in a flavorful sauce with fresh vegetables. It’s a light, gluten-free, and satisfying stir-fry-style dish that brings together tender roasted squash strings with a savory, slightly sweet sauce and crisp veggies for a nutritious meal.

Ingredients

Spaghetti Squash

  • 1 large spaghetti squash

Sauce

  • ¼ cup coconut aminos (or tamari if not paleo)
  • 3 cloves garlic, minced
  • 1 tablespoon coconut sugar
  • 2 teaspoons freshly grated ginger
  • ¼ teaspoon white pepper (or black pepper)

Vegetables & Oil

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 stalks celery, sliced diagonally
  • 2 cups cole slaw mix (shredded cabbage and carrots)

Instructions

  1. Prepare the Spaghetti Squash: Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the halves skin side up in a 13 x 9 inch Pyrex dish and pour ½ inch of water into the bottom of the pan. Bake at 400°F (200°C) for 30 to 40 minutes until the flesh is very tender.
  2. Scoop Out the Squash Flesh: Once baked and cooled slightly, use a fork to scrape the flesh of the squash so that it breaks apart into noodle-like strings. Set these aside for later use.
  3. Whisk the Sauce: In a small bowl, combine the coconut aminos, minced garlic, coconut sugar, freshly grated ginger, and white pepper. Whisk well to create a flavorful sauce and set aside.
  4. Sauté Vegetables: Heat olive oil in a large skillet over medium-high heat. Add the diced onion and sliced celery, cooking and stirring frequently until tender, about 3 to 4 minutes.
  5. Add Cole Slaw Mix: Stir in the shredded cabbage and carrot mix and cook for about 1 minute until heated through.
  6. Combine and Cook Together: Add the roasted spaghetti squash strings and the prepared sauce to the skillet. Stir everything until well combined and heated through, about 2 minutes.
  7. Serve: Remove from heat and serve immediately for a warm, flavorful, and healthy chow mein alternative.

Notes

  • To save time, spaghetti squash can be cooked in advance and stored in the refrigerator.
  • You can substitute tamari or soy sauce for coconut aminos if not following a paleo diet.
  • Adjust the sweetness by modifying the amount of coconut sugar to taste.
  • For a spicier kick, add crushed red pepper flakes along with the sauce ingredients.
  • This dish is naturally gluten-free and paleo-friendly, making it great for those dietary preferences.
