Ingredients

Meatballs

  • 1 pound skinless salmon (cut into chunks)
  • 3 garlic cloves (minced)
  • 2 teaspoons grated fresh ginger
  • ½ teaspoon Chinese 5-spice powder
  • ½ teaspoon kosher salt
  • 1 egg white
  • ¼ cup + 2 tablespoons whole wheat panko breadcrumbs
  • 2 tablespoons minced flat-leaf parsley

Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon rice vinegar
  • ¼ teaspoon garlic powder

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350 degrees Fahrenheit and lightly coat a large baking sheet with cooking spray to prevent sticking.
  2. Process Salmon: Place the salmon chunks in the food processor bowl and pulse until finely chopped, making sure to scrape down the sides as needed. Transfer the chopped salmon to a large mixing bowl.
  3. Mix Meatball Ingredients: To the bowl with chopped salmon, add minced garlic, grated ginger, Chinese 5-spice powder, kosher salt, egg white, whole wheat panko breadcrumbs, and minced parsley. Mix thoroughly to combine all flavors evenly.
  4. Form Meatballs: Using a rounded tablespoon, scoop portions of the salmon mixture and roll them gently between your palms to form evenly sized meatballs. Place each meatball on the prepared baking sheet, spacing them out evenly.
  5. Bake Initial Phase: Put the baking sheet in the oven and bake the meatballs for 5 minutes to start cooking through.
  6. Prepare the Sauce: While the meatballs bake, whisk together soy sauce, honey, grated ginger, rice vinegar, and garlic powder in a small bowl. Separate half of this sauce into another bowl.
  7. Brush and Continue Baking: After the initial 5 minutes, brush the meatballs with half of the prepared sauce. Return them to the oven and continue baking for an additional 5 to 7 minutes until the meatballs have cooked through and are firm to the touch.
  8. Final Glaze and Serve: Remove the meatballs from the oven and brush them with the remaining sauce for an extra layer of flavor. Serve immediately for best taste.

Notes

  • Using whole wheat panko breadcrumbs adds fiber and a healthy twist to the recipe.
  • Ensure the salmon is very fresh or previously frozen and thawed for the best texture and safety.
  • Customize the spice level by adjusting the amount of ginger and garlic powder in the sauce.
  • If you do not have a food processor, finely chop the salmon by hand, although texture may vary.
  • The meatballs can be made ahead and refrigerated before baking for convenience.
  • For a gluten-free option, use gluten-free breadcrumbs and soy sauce alternatives.
