This Sour Cream and Onion Chicken recipe features tender, juicy chicken breasts cooked in a rich and creamy sour cream sauce with caramelized onions and garlic. The dish is quick and easy to prepare, perfect for a delicious weeknight dinner that pairs well with rice, potatoes, or vegetables.

Ingredients

Chicken

  • 2 boneless skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper, to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)

Sauce and Toppings

  • 1 medium onion, sliced
  • 1 clove garlic, minced
  • 1/2 cup chicken broth
  • 1 teaspoon soy sauce
  • 1 cup full-fat sour cream
  • Fresh chopped parsley (optional, to taste)

Instructions

  1. Prepare the Chicken: Slice each chicken breast in half lengthwise to create four thinner pieces. Season them evenly with garlic powder, salt, and pepper.
  2. Heat the Pan: Place a skillet over medium-high heat and add olive oil along with one tablespoon of butter. Allow the pan to heat thoroughly for a few minutes.
  3. Cook the Chicken: Add the chicken pieces to the hot skillet and cook for 5-6 minutes on each side, or until the chicken achieves a golden brown color and reaches an internal temperature of 165°F. Remove the chicken from the skillet and set aside on a plate.
  4. Sauté the Onions: Lower the heat to medium and add the remaining butter and sliced onions to the skillet. Cook, stirring occasionally, until the onions soften and turn lightly browned, approximately 10-15 minutes. Adjust heat accordingly to prevent burning and encourage slow caramelization.
  5. Add the Garlic: Stir in minced garlic and cook it for about 30 seconds until fragrant.
  6. Deglaze the Pan: Pour in chicken broth and soy sauce while scraping the bottom of the skillet to release any browned bits for added flavor.
  7. Make the Sauce: Blend in the sour cream steadily until the sauce is smooth. Warm the sauce for a couple of minutes but avoid boiling to prevent curdling.
  8. Combine and Serve: Return the cooked chicken to the skillet, spoon the sauce over the top, and season with additional salt and pepper if needed. Garnish with freshly chopped parsley and serve immediately.

Notes

  • Use full-fat sour cream for the creamiest sauce and best texture.
  • Make sure not to boil the sauce after adding sour cream to prevent curdling.
  • Chicken breasts can be thick, so slicing them thinner helps them cook evenly and quickly.
  • Serve this dish with steamed rice, mashed potatoes, or fresh vegetables for a complete meal.
  • Parsley garnish is optional but adds a pop of color and freshness.
