Ingredients

Meat and Spices

  • 1 tbsp olive oil
  • 1 ½ lbs ground turkey
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 2 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp oregano
  • ½ tsp cayenne pepper (optional)

Vegetables and Beans

  • ½ a large yellow onion or 1 small yellow onion, diced
  • 1 can fire roasted diced tomatoes (15 oz)
  • 1 can white beans (15 oz), drained and rinsed
  • 1 can kidney beans (15 oz), drained and rinsed
  • 1 can diced green chiles (4 oz)

Liquids

  • 2 cups chicken broth

Instructions

  1. Brown the Turkey: Heat olive oil in a frying pan over medium heat. When hot, add the ground turkey and cook until browned and crumbled, stirring occasionally to break up the meat.
  2. Season the Meat: Sprinkle the chili powder, ground cumin, kosher salt, garlic powder, oregano, and optional cayenne pepper over the turkey. Stir well and sauté for an additional couple of minutes to allow the spices to bloom.
  3. Transfer to Slow Cooker: Pour the seasoned turkey mixture into the slow cooker. Add the diced onion, fire-roasted diced tomatoes, white beans, kidney beans, diced green chiles, and chicken broth. Stir everything together to combine evenly.
  4. Cook Low and Slow: Cover and cook on low heat for 6 hours, or on high heat for 3 hours, until the flavors meld and the chili thickens to your desired consistency.
  5. Serve and Garnish: Spoon the chili into bowls and top with your favorite chili accompaniments such as sour cream, chopped green onions, pickled jalapeños, sliced avocado, or corn chips.

Notes

  • For a spicier chili, increase the cayenne pepper or add fresh jalapeños during cooking.
  • This recipe is great for meal prep and tastes even better the next day.
  • You can substitute ground turkey with ground chicken or lean ground beef if preferred.
  • Drain and rinse canned beans to reduce sodium content.
  • Adjust thickness by adding more chicken broth for a soupier chili or cooking uncovered for the last hour to thicken.
