This Slow Cooker Sweet Chili Chicken recipe is a deliciously easy way to prepare tender, flavorful chicken thighs simmered in a sweet and tangy chili glaze. Perfect for busy days, the slow cooker does all the work, infusing the chicken with a harmonious blend of sweet chili sauce, soy sauce, and spices. Served over rice and garnished with fresh cilantro, this meal is comforting, vibrant, and effortlessly satisfying.

Ingredients

Chicken

  • 1 1/2 pounds boneless skinless chicken thighs (breasts can be substituted)

Sauce

  • 3/4 cup sweet chili sauce
  • 1 1/2 cups chicken broth
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 cup soy sauce

Thickening Mixture

  • 1/4 cup chicken broth
  • 2 tablespoons cornstarch

Garnish

  • 1 handful fresh cilantro, snipped

Instructions

  1. Prepare the sauce. In the bottom of a large slow cooker, whisk together the sweet chili sauce, chicken broth, kosher salt, black pepper, and soy sauce until well combined.
  2. Add the chicken. Place the chicken thighs on top of the sauce in the slow cooker. Spoon some of the sauce over the chicken to coat it evenly.
  3. Cook low and slow. Cover the slow cooker with the lid and cook on low for 6 hours. Avoid opening the lid during cooking to preserve moisture and ensure tender chicken.
  4. Thicken the sauce (optional). Once cooked, remove the chicken and cut it into bite-sized pieces. In a small glass, whisk together the additional 1/4 cup chicken broth and cornstarch until smooth. Pour this mixture into the crockpot sauce and stir well. Return the chicken to the crockpot, cover, and cook for an additional 20 to 30 minutes to allow the sauce to thicken and flavors to meld further.
  5. Garnish and serve. Sprinkle the snipped fresh cilantro over the chicken, stir gently to combine, and serve immediately. This dish pairs wonderfully with cilantro lime rice or steamed vegetables.

Notes

  • Substitute chicken breasts if preferred, but thighs keep the dish more moist and flavorful.
  • Do not open the slow cooker lid during cooking to maintain moisture.
  • Thickening the sauce is optional but recommended for a richer texture.
  • For a lower sodium version, reduce or omit the soy sauce.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
