Delicious and easy-to-make shrimp wontons featuring coarsely chopped shrimp mixed with classic seasonings, wrapped in wonton skins, and cooked by boiling or steaming. Perfectly tender and flavorful, these wontons are wonderfully complemented by a zesty ginger vinegar dipping sauce.

Ingredients

Shrimp Wontons

  • 12 oz (350g) shrimp, shelled and deveined
  • 1 teaspoon salt
  • 1 teaspoon oil
  • 1 teaspoon ginger, peeled and grated
  • 1 teaspoon sugar
  • 1 tablespoon Chinese rice wine
  • 1 teaspoon sesame oil
  • 2 teaspoons cornstarch
  • 1 tablespoon scallions, chopped
  • 3 dashes ground white pepper
  • 1 pack wonton wrappers
  • 1 egg, beaten (for sealing wontons)

Ginger Vinegar Dipping Sauce

  • 2 teaspoons fresh ginger, peeled and grated
  • 2 tablespoons soy sauce
  • 2 tablespoons dark vinegar
  • 1 tablespoon chopped scallion

Instructions

  1. Prepare the Shrimp Filling: Coarsely chop the shrimp into bite-sized pieces, being careful not to make them too small. In a mixing bowl, combine the chopped shrimp with salt, oil, grated ginger, sugar, Chinese rice wine, sesame oil, cornstarch, chopped scallions, and ground white pepper. Mix well until all ingredients are evenly incorporated and set aside.
  2. Form the Wontons: Lay out a wonton wrapper and place about one heaping teaspoon of the shrimp filling in the center. Brush the edges of the wrapper with the beaten egg, then fold and seal the wonton tightly to prevent leaking during cooking. Repeat this process until all filling is used.
  3. Cook the Wontons: Bring a pot of water to a boil. Gently add the wontons into the boiling water and cook for 2 to 3 minutes, or until the wontons float to the surface, indicating they are cooked through. Alternatively, place the wontons in a steamer and steam for 6 to 8 minutes until fully cooked.
  4. Prepare the Dipping Sauce: In a small bowl, mix together grated ginger, soy sauce, dark vinegar, and chopped scallions. Stir well and set aside to allow flavors to meld.
  5. Serve: Transfer the cooked wontons to a serving dish and serve hot alongside the ginger vinegar dipping sauce for an authentic and flavorful experience.
