Ingredients

Pasta and Vegetables

  • 4 oz whole wheat pasta noodles
  • 10 oz bagged slaw (384 g)
  • 1 1/2 cups cooked edamame

Dressing

  • 3 tablespoons olive oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons honey
  • 2 tablespoons sesame oil (toasted or un-toasted)
  • 1 teaspoon soy sauce (reduced sodium)
  • 2 cloves garlic, minced
  • 1/8 teaspoon salt
  • 1 tablespoon ginger, minced

Garnish

  • 1 teaspoon sesame seeds
  • Green onions, thinly sliced

Instructions

  1. Cook Pasta: Cook the whole wheat pasta according to package directions until al dente. Once cooked, drain and set aside to cool while preparing other ingredients.
  2. Prepare Vinaigrette: In a 1/2 pint jar or salad dressing shaker, combine the olive oil, rice vinegar, honey, sesame oil, reduced sodium soy sauce, minced garlic, salt, and minced ginger. Shake well until all ingredients are thoroughly blended. Set the dressing aside.
  3. Assemble Salad: In a large mixing bowl, combine the cooled pasta, cooked edamame, and bagged slaw. Pour the prepared vinaigrette over the mixture and use tongs to toss everything thoroughly, ensuring the dressing coats all ingredients evenly.
  4. Garnish and Serve: Sprinkle the salad with sesame seeds and chopped green onions for a fresh finish. Serve immediately and enjoy this flavorful and nutritious noodle salad.

Notes

  • Whole wheat pasta adds fiber and a nutty flavor; regular pasta can be used as a substitute.
  • Use a prepackaged slaw mix for convenience and extra crunch.
  • Reduced sodium soy sauce helps keep the salt content in check.
  • Honey balances the acidity of the vinegar with natural sweetness; maple syrup can be used as a vegan alternative.
  • To toast sesame oil for a deeper flavor, gently warm it in a pan over low heat before mixing.
