Sautéed Mushrooms with Garlic is a quick and flavorful side dish featuring thinly sliced mushrooms cooked to golden brown perfection with fragrant garlic and fresh thyme. The mushrooms are cooked in olive oil and butter to achieve a crispy, caramelized texture, making it a perfect accompaniment to any meal or a savory snack.

Ingredients

Vegetables and Herbs

  • 16 ounces mushrooms, sliced thinly
  • 4 cloves garlic, minced
  • 4 sprigs thyme, plus more for garnish

Oils and Fats

  • 3 tbsp olive oil, divided
  • 2 tbsp unsalted butter

Seasonings

  • Salt and pepper, to taste

Instructions

  1. Heat and infuse oil: Heat a large skillet over medium-high heat. Add 2 tablespoons of olive oil and the thyme sprigs. Cook for 2-3 minutes until the thyme is slightly toasted and the oil becomes fragrant.
  2. Cook first batch of mushrooms: Add half of the sliced mushrooms to the skillet, spreading them out in a thin layer. Cook without stirring for 3-4 minutes until golden brown on one side. Flip and cook the other side until mushrooms are crispy and caramelized. Remove the mushrooms from the skillet and set aside on a plate.
  3. Cook second batch of mushrooms: Add the remaining 1 tablespoon of olive oil to the same skillet and repeat the process with the remaining mushrooms, cooking until they are also crispy and caramelized.
  4. Combine and finish: Return the first batch of mushrooms to the skillet along with the butter and minced garlic. Cook for an additional 2-3 minutes, stirring occasionally, until the garlic develops some color and the butter melts fully.
  5. Season and serve: Season the sautéed mushrooms with salt and pepper to taste. Garnish with fresh thyme sprigs and serve immediately.

Notes

  • Cooking mushrooms in batches helps them become crispier rather than soggy.
  • Use a large skillet to ensure mushrooms cook evenly without steaming.
  • If fresh thyme isn’t available, dried thyme can be substituted, but use sparingly as dried herbs are more potent.
  • Serve as a side dish to grilled meats, pasta, or as a topping for toast.
  • For a vegan version, substitute butter with additional olive oil or a plant-based butter alternative.
