This Samoa-inspired overnight oats recipe is a delicious and nutritious breakfast option that combines old fashioned rolled oats with chocolate protein powder, toasted coconut, and date caramel. Prepared by soaking the ingredients overnight in the fridge, this easy make-ahead meal is creamy, flavorful, and topped with extra coconut and chocolate chips for a perfect sweet start to your day.

Ingredients

Base Ingredients

  • ½ cup old fashioned rolled oats
  • ¾ - 1 cup light coconut milk or unsweetened almond milk
  • 1 scoop chocolate protein powder
  • 1 Tablespoon unsweetened toasted shredded coconut (plus more for topping)
  • ½ Tablespoon date caramel (plus more for topping)
  • 1 teaspoon chia seeds
  • ½ teaspoon vanilla flavoring
  • Pinch of sea salt
  • 1 Tablespoon chocolate chips (I used Lily’s)

Toppings

  • Toasted shredded coconut
  • Additional date caramel
  • Chopped chocolate or additional chocolate chips

Instructions

  1. Mix: In a small container or mason jar, combine the rolled oats, light coconut milk or almond milk, chocolate protein powder, toasted shredded coconut, date caramel, chia seeds, vanilla flavoring, sea salt, and chocolate chips. Stir thoroughly to distribute all ingredients evenly.
  2. Chill: Cover the container with a lid and place it in the refrigerator overnight, or for at least 1-2 hours, allowing the oats and chia seeds to fully absorb the liquid and flavors.
  3. Stir: Remove the oats from the fridge in the morning and stir well. The mixture will be thick as the oats, protein powder, and chia seeds have absorbed the liquid. Add a little more milk if you prefer a creamier consistency.
  4. Top and Serve: Garnish your oats with extra toasted shredded coconut, a drizzle of date caramel, and chopped chocolate or additional chocolate chips. Enjoy your Samoa-inspired overnight oats immediately.

Notes

  • You can adjust the amount of coconut or almond milk to achieve your desired thickness.
  • For a vegan version, ensure your chocolate protein powder and chips are plant-based.
  • Store leftovers in the refrigerator for up to 3 days; freshen with a splash of milk before eating.
  • To toast shredded coconut at home, dry-toast in a skillet over medium heat until golden and fragrant.
