This Roasted Miso Butter Asparagus recipe combines tender, caramelized asparagus with a rich, savory miso butter, finished with a sprinkle of toasted sesame seeds. Perfect as a flavorful side dish, it requires minimal prep and is roasted in the oven to bring out the natural sweetness and umami of the ingredients.

Ingredients

Asparagus

  • 1½ pounds asparagus stalks
  • 1 tablespoon extra-virgin olive oil
  • Kosher salt, as needed
  • Freshly ground black pepper, as needed

Miso Butter

  • 2 tablespoons unsalted butter, softened at room temperature
  • 1 tablespoon white miso paste
  • ½ teaspoon toasted white sesame seeds

Instructions

  1. Preheat and Prep: Heat the oven to 425ºF (220ºC). Trim or snap off about 2 inches (5 cm) of the woody ends from the asparagus stalks to ensure tenderness.
  2. Toss with Oil and Seasoning: Spread the asparagus on a baking sheet, drizzle with extra-virgin olive oil, and season generously with kosher salt and freshly ground black pepper. Toss to coat evenly.
  3. Initial Roasting: Roast the asparagus in the preheated oven for 10 minutes to begin softening and lightly browning the stalks.
  4. Prepare Miso Butter: While the asparagus roasts, combine the softened unsalted butter and white miso paste in a small bowl, stirring until fully integrated into a smooth mixture.
  5. Add Miso Butter and Continue Roasting: Remove the asparagus from the oven and top with the miso butter mixture, tossing gently to coat all stalks. Return to the oven and roast for an additional 4 minutes until the asparagus is tender and has browned spots.
  6. Finish and Serve: Remove from oven, sprinkle toasted white sesame seeds over the asparagus for a nutty crunch and serve immediately.

Notes

  • Trim asparagus ends just before cooking for fresh flavor and texture.
  • White miso paste can be substituted with yellow miso for a milder flavor.
  • Use a quality unsalted butter to best complement the miso’s umami.
  • To toast sesame seeds, dry skillet over medium heat, stirring frequently until lightly golden and fragrant.
  • For a vegan version, substitute butter with a plant-based margarine and ensure miso paste contains no fish additives.
