Crispy and flavorful Roasted Greek Potato Wedges seasoned with oregano, garlic, and onion powder, finished with crumbled feta and fresh herbs. These Greek fries are perfect as a snack or a side dish, best enjoyed with tzatziki sauce or alongside Greek chicken burgers.

Ingredients

Seasoning

  • 1 ½ teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Potatoes

  • 2 pounds waxy potatoes (such as Yukon Gold)
  • 2 tablespoons extra virgin olive oil

Toppings

  • Crumbled feta cheese
  • Finely chopped fresh parsley or dill

Instructions

  1. Mix the seasoning: Preheat your oven to 425°F (220°C). In a small bowl, combine the garlic powder, dried oregano, onion powder, kosher salt, and black pepper. Stir until well mixed and set aside.
  2. Slice the potatoes: Cut each potato into 8 evenly sized wedges. Place them in a medium bowl, drizzle with extra virgin olive oil, then sprinkle the prepared seasoning over. Toss the wedges thoroughly to ensure every piece is evenly coated with the oil and spices.
  3. Roast the potato wedges: Arrange the potato wedges on a rimmed baking sheet in a single layer, making sure one side of each wedge lays flat for maximum crispiness. Roast in the preheated oven for 25 minutes. After 25 minutes, flip the wedges carefully to the other side and roast for an additional 15 to 20 minutes, or until the wedges are crispy on the outside and tender inside.
  4. Serve: Remove the roasted Greek potato wedges from the oven. Sprinkle crumbled feta and freshly chopped parsley or dill over the top. Serve hot with a side of tzatziki sauce for dipping, or alongside Greek chicken burgers for a delicious meal.

Notes

  • Using waxy potatoes like Yukon Gold helps the wedges hold their shape and get crispy.
  • Make sure to lay the wedges flat on the baking sheet to achieve crispy edges.
  • For extra flavor, sprinkle feta and fresh herbs just before serving.
  • These wedges pair perfectly with tzatziki sauce for an authentic Greek snack experience.
  • Oven temperatures can vary, so check wedges towards the end of cooking to prevent burning.
