These Roasted Goat Cheese Stuffed Mini Peppers are a delightful and easy appetizer featuring sweet mini bell peppers filled with creamy goat cheese, roasted to perfection, and finished with a drizzle of balsamic glaze and honey. Perfect for gatherings or a light snack, this dish balances savory, sweet, and herbaceous flavors in every bite.

Ingredients

Mini Peppers

  • 1 pound mini sweet bell peppers (about 12 peppers)

Filling

  • 10 ounces goat cheese

Toppings

  • Balsamic glaze, to drizzle
  • Honey, to drizzle
  • 2 tablespoons fresh thyme (or dried thyme, fresh preferred)
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it is hot enough for roasting the peppers effectively.
  2. Prepare Peppers: Wash and dry the mini sweet bell peppers thoroughly. Slice each pepper in half lengthwise and remove all seeds and any white fleshy parts to create a hollow cavity for stuffing.
  3. Stuff Peppers: Using a spoon, spoon a couple of scoops of goat cheese into each pepper half. Adjust the amount of goat cheese to your liking, whether you prefer them filled to the brim or with just a modest amount.
  4. Arrange for Roasting: Place the stuffed peppers in a single layer in a baking dish or on a baking sheet to ensure even roasting and browning.
  5. Roast: Roast the stuffed peppers in the preheated oven for 20-25 minutes or until the peppers are soft and beginning to brown or char slightly, enhancing their natural sweetness and flavor.
  6. Finish and Serve: Carefully remove the roasted peppers from the oven and transfer them to a serving platter. Drizzle with balsamic glaze and honey, then sprinkle fresh thyme and freshly ground black pepper over the top. Serve warm and enjoy this flavorful appetizer.

Notes

  • You can adjust the amount of goat cheese depending on your preference, either stuffing the peppers to the brim or with a small scoop.
  • Fresh thyme adds a nicer presentation and brighter flavor, but dried thyme can be used as a substitute.
  • Serve these warm for best flavor, but they can also be enjoyed at room temperature.
  • Balsamic glaze and honey can be adjusted to your taste for sweetness and tang.
