Ingredients

Chickpeas and Seasoning

  • 1 15-oz can chickpeas (425 g, or 1 ½ cup soaked chickpeas if starting from dry, drained and rinsed)
  • 1 Tbsp olive oil (15 mL)
  • 1 Tbsp paprika
  • 1 tsp ground black pepper
  • ½ tsp cayenne pepper
  • ¼ tsp salt

Gyro Assembly

  • 4 pita flatbreads
  • 1 cup tzatziki (250 g, use ⅓ recipe if making from scratch)
  • ¼ red onion, cut into strips
  • 2 lettuce leaves, roughly chopped
  • 1 tomato, sliced

Instructions

  1. Prep: Preheat your oven to 400°F (204°C). Drain the canned chickpeas thoroughly and pat them dry with paper towels, removing any loose skins to ensure crisp roasting.
  2. Flavor: In a medium-sized bowl, toss the dried chickpeas with olive oil, paprika, ground black pepper, cayenne pepper, and salt until they are evenly coated with the spices.
  3. Roast: Spread the seasoned chickpeas in a single layer on a greased rimmed baking sheet. Roast them in the oven for about 20 minutes, until lightly browned and crispy but not hard.
  4. Assemble: Warm the pita flatbreads if desired. Spread a generous amount of tzatziki onto one side of each pita. Then add the roasted chickpeas, followed by red onion strips, roughly chopped lettuce, and sliced tomato. Fold the pita in half and serve immediately to enjoy the delicious blend of flavors and textures.

Notes

  • For extra crispiness, shake the pan or stir the chickpeas halfway through roasting.
  • You can make homemade tzatziki or purchase it pre-made to save time.
  • Adjust the cayenne pepper amount to control the spice level.
  • Use gluten-free pita bread if you want to make this recipe gluten free.
  • Leftover roasted chickpeas can be stored in an airtight container and enjoyed as a snack.
