Ingredients

Grains

  • 1 cup white or brown rice

Vegetables

  • 1 head of cauliflower, chopped into florets
  • 2 tomatoes, chopped
  • Half of a small onion, chopped
  • 2 ears of corn, kernels cut off the cob
  • 1 avocado

Legumes

  • 1 14-ounce can of black beans, rinsed and drained

Seasonings & Others

  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning, divided
  • 1/2 cup water
  • Juice of 2 limes plus more wedges for serving
  • 1/2 cup chopped fresh cilantro
  • Salt and pepper, to taste
  • Your favorite hot sauce for topping

Instructions

  1. Cook the Rice: Prepare the rice according to the package instructions until it is fully cooked and fluffy. Set aside and keep warm.
  2. Prepare and Roast Cauliflower: Preheat your oven to 425°F (220°C). Toss the cauliflower florets with olive oil, half of the taco seasoning, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes, turning halfway through to ensure even roasting and prevent burning. The cauliflower should be tender and slightly caramelized.
  3. Cook and Mash Black Beans: In a small saucepan, combine the rinsed black beans, water, and remaining taco seasoning. Bring the mixture to a low simmer over medium-low heat. Use the back of a spoon to mash the beans gradually until the mixture becomes creamy but still has some texture. Continue to heat until the beans thicken slightly, then remove from heat.
  4. Make Pico de Gallo: In a bowl, combine the chopped tomatoes, chopped onion, lime juice, and chopped cilantro. Season with salt to taste and toss gently to blend the flavors. This fresh salsa adds brightness to the bowl.
  5. Assemble the Burrito Bowls: In large serving bowls, layer the cooked rice, refried black beans, corn kernels, pico de gallo, and slices or cubes of avocado. Top each bowl generously with the roasted cauliflower florets. Add a lime wedge on the side and drizzle your favorite hot sauce over the top if desired.

Notes

  • You can substitute brown rice for white rice for added fiber and nutrients.
  • For a spicier version, add extra taco seasoning or a pinch of cayenne pepper to the cauliflower before roasting.
  • If you prefer, you can grill the corn instead of using raw kernels for a smoky flavor.
  • Leftover components can be stored separately in airtight containers and combined just before serving.
  • This dish can easily be made vegan by verifying that your taco seasoning and hot sauce contain no animal products.
