A vibrant and healthy Roasted Carrot and Feta Salad that combines tender, caramelized carrots with the salty creaminess of feta cheese and fresh parsley, perfect as a side dish or light meal.

Ingredients

Salad Ingredients

  • 2 lbs. carrots
  • 2 Tbsp olive oil
  • Salt and Pepper to taste
  • 1/2 bunch fresh parsley
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat and Prepare Carrots: Preheat the oven to 400ºF. Peel and slice the carrots into one-inch pieces. For thicker ends, cut them lengthwise as well to ensure uniform thickness for even roasting.
  2. Roast Carrots: Line a baking sheet with parchment paper for easier cleanup. Place the carrots on the baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat evenly. Roast in the oven for 40 minutes, stirring once halfway through to brown all sides evenly.
  3. Cool and Prepare Toppings: After roasting, the carrots should be tender with slightly blistered and browned surfaces. Allow them to cool slightly until they stop steaming. Meanwhile, roughly chop the fresh parsley and crumble the feta cheese.
  4. Combine and Serve: In a bowl, combine the roasted carrots, chopped parsley, and crumbled feta. Add another pinch of salt and pepper as needed and toss gently to mix all ingredients. Serve warm for best flavor and texture.

Notes

  • Ensure carrot pieces are similar in size for even roasting.
  • Parchment paper helps prevent sticking and eases cleanup.
  • Serve the salad warm to enjoy the flavors best.
  • Can be served as a side dish or a light vegetarian main.
  • Adjust seasoning to taste before serving.
