A comforting and flavorful Red Lentil Dahl (Masoor Dal) recipe that combines tender red lentils simmered with aromatic spices, ginger, garlic, and onions. This hearty dish is perfect as a nutritious main or side, served alone or alongside rice or naan bread.

Ingredients

Main Ingredients

  • 1 cup (dry) red lentils
  • 2 1/2 cups water
  • 1 large onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 2 tbsp ginger, grated
  • 1 tbsp vegetable oil

Spices

  • 1 tsp coriander seeds
  • 1/2 tsp smoked paprika (can substitute regular paprika)
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp ground black pepper
  • 3/4 tsp salt

Instructions

  1. Rinse Lentils: Rinse the red lentils thoroughly in a strainer under running water until the water runs clear to remove any bitterness.
  2. Cook Lentils: In a large pot, combine the rinsed lentils, half of the chopped onion, and water. Bring to a boil, then cover and reduce heat to let it simmer gently for 20-30 minutes, or until the lentils are soft and tender.
  3. Prepare Spice Mixture: Meanwhile, heat vegetable oil in a pan over medium-high heat. Add the remaining half of the chopped onion, garlic, and grated ginger; sauté for 1-2 minutes until fragrant. Lower the heat to medium, then add coriander seeds, smoked paprika, turmeric, cumin, and black pepper. Stir and cook the spices with the aromatics for about 1 minute before removing the pan from heat.
  4. Combine and Season: Once the lentils are cooked, add the spice mixture and salt to the pot. Stir well to combine all the flavors. Taste the dahl and adjust seasoning if necessary.
  5. Serve: Serve the red lentil dahl hot on its own, or with rice or naan bread for a complete meal.

Notes

  • Rinsing lentils well removes bitterness and helps achieve a smoother texture.
  • Simmering time can vary slightly depending on lentil freshness; cook until soft.
  • Smoked paprika adds a subtle smoky flavor; regular paprika is a fine substitute.
  • For extra creaminess, stir in a splash of coconut milk or cream before serving.
  • This dish is naturally vegan and gluten-free.
